Vegan Mango Gelato
Vegan Mango Gelato
Dense, silky mango gelato with intense fruit flavor — no-churn, no eggs, fully vegan

This vegan mango gelato is dense and silky like the real Italian kind — ripe mango blended thick with coconut cream, a squeeze of lime, and just enough sweetness to let the fruit lead.
No machine needed. The stir-and-freeze method gives you those clean, quenelle-ready scoops from the photo.
Why you'll love this mango gelato
- Dense and silky — true gelato texture, not icy sorbet
- Intense mango flavor — fruit first, sweetness second
- No-churn, no machine, fully vegan
- 15 minutes of work, freezer does the rest
- Scoops clean like the gelato shop
- That golden color is 100% mango
Health notes
- Mango: Vitamins A and C plus natural fruit sugars — the flavor base.
- Lime: A squeeze keeps the color bright and the flavor lifted.
- Coconut cream: The body and dense texture without dairy.
- Cornstarch: A spoonful mimics egg-yolk body — gelato silk without eggs.
Key element — ripe mango, low water
Gelato is denser than ice cream because there's less air and less water. Very ripe mango (deep orange, fragrant, slight give) plus thick coconut cream keeps water low — that's what makes it silky instead of icy.
Ingredients
Base
- 3 cups very ripe mango, cubed (about 3 large mangoes, or frozen and thawed)
- 1 can (13.5 oz) full-fat coconut milk, chilled
- 1 cup thick coconut cream (the solid top of a second chilled can)
- ⅓ cup maple syrup (or agave) — adjust to your mangoes
- 1 Tbsp lime juice
- 1 Tbsp cornstarch
- 1 tsp vanilla extract
- Pinch of salt
To serve
- Fresh mango cubes or mint leaves
- Vegan cones or chilled bowls
- A pinch of lime zest (optional)
Swaps
- Frozen mango: Works perfectly — thaw and drain well first.
- Peach: Ripe peaches swap in 1:1 in late summer.
- Sugar-free: Liquid monk fruit to taste; texture softens slightly.
- With a machine: Churn 20–25 minutes instead of stir-and-freeze.
Instructions
| 1 | Prep the mango. Peel and cube the mangoes — you need 3 packed cups. If using frozen, thaw completely and drain off the juice (drink it, don't freeze it into the gelato). |
| 2 | Thicken the base. Whisk the cornstarch into the coconut milk in a small pan. Heat, stirring, until it just simmers and thickens slightly — 2–3 minutes. Cool for 10 minutes. This gives the gelato its silky body. |
| 3 | Blend everything. Blend the mango with the thickened coconut milk, coconut cream, maple syrup, lime juice, vanilla and salt for a full 60 seconds until completely smooth. |
| 4 | Chill the base. Refrigerate the blended base for at least 1 hour — cold base freezes faster and finer. |
| 5 | Freeze and stir. Pour into a loaf pan or shallow container. Freeze, stirring vigorously with a fork at 45 minutes, 90 minutes and 2 hours — scraping the edges into the center to break up crystals. |
| 6 | Finish and scoop. Freeze 2 more hours until firm but scoopable. Rest 10 minutes on the counter, scoop into quenelles or balls with a hot spoon, and serve with fresh mango or mint. |
Pro tips
- Ripe mango only — underripe mango is fibrous and bland frozen.
- Don't skip the cornstarch simmer; it's the silk.
- Chill the base first — cold base, finer crystals.
- Stir on schedule. Set timers, don't trust memory.
- Serve slightly soft — gelato shines 10 minutes out of the freezer.
