Chicken Flatbread

Chicken Flatbread
Jump to Recipe

This is the flatbread I make when I want pizza on the table and I do not want dough from scratch. A store-bought flatbread or naan goes on a hot pan or a sheet pan, a thin layer of sauce and cheese goes down, and seared chicken, tomato, onion, and olives go on top. Basil finishes it after the oven, so it stays green. The crust should blister, not go soft in the middle.

Chicken is cooked first. Raw chicken on a flatbread will not finish before the crust burns. A short sear, cut into chunks, is enough. Cheese is the glue, not a thick blanket. Too much and you lose the tomato and olive the way they show in the photo. Olive oil on the crust before it bakes is what gives the edge its color.

It makes two flatbreads, enough for two as a meal or four if you cut them and add a salad. Eat them as soon as they are cut. The cheese sets if they sit, and the pull is gone.

Ingredients

  • Chicken
  • Flatbread

Instructions

  1. Heat the oven to 425 F (220 C), or heat a skillet over medium.
  2. Toss the chicken with 1 tsp olive oil, salt, garlic powder, pepper, and oregano. Sear 4 to 5 minutes, until cooked through and spotted gold. Rest it.
  3. Brush the flatbreads with a little olive oil. Spread a thin layer of sauce. Scatter the mozzarella, then the chicken, tomatoes, onion, and olives.
  4. Bake 8 minutes, or cook in a covered skillet 4 minutes, until the cheese melts and the edge blisters.
  5. Finish with basil. Cut and serve right away.

Notes & Tips

  1. Cook the chicken first. It will not finish on the flatbread alone.
  2. Thin sauce and thin cheese. A heavy layer makes the center soggy.
  3. Hot pan or hot oven. A cool start gives you a pale crust.
  4. Herbs after the heat, so they stay bright.

  6. Nutrition: Net carbohydrates: 39g
  7. Nutrition: WW estimate: 13 points on the current plan (flatbread and cheese carry most of the points; chicken is the lighter part)
  8. Fridge: 2 days, wrapped. Re-crisp in a hot skillet or a 400 F oven for 5 minutes. The microwave makes the crust tough.
  9. Best the hour it is baked.
  10. Nutrition is an estimate from flatbread, chicken, mozzarella, tomato, onion, olives, and olive oil.
  11. ## The Secret to a Crisp Flatbread
  12. Oil the bread, then the sauce, and keep both thin. A dry crust under a wet sauce steams. A light brush of olive oil, a spoon of sauce, and a hot oven are what blister the edge the way it does in the photo. If the center is still soft at 8 minutes, slide it onto the oven rack for 2 more minutes with no pan under it.

Variations & serving ideas

  • No mozzarella: use provolone, or a mix with a little feta.
  • No flatbread: pita works. It will be smaller, so make three.
  • Higher protein: add another 4 oz chicken. The bread can take it.
  • Dairy-free: skip the cheese and use a thicker pesto. It will not melt, and it still eats well.
  • No olives: capers, 1 tsp, give a similar salty note.

Frequently asked questions

What chicken works best?

Breast or thigh. Thigh stays juicier. Breast is leaner. Sear either one before it goes on the bread.

Can I freeze it?

Freeze the seared chicken and the topped, unbaked flatbread separately. Bake from thawed. A baked flatbread goes soggy after a thaw.

How do I make it heartier?

Add a handful of spinach under the cheese, or a spoon of white beans with the chicken. A side salad turns two flatbreads into four plates.
