Vegan Lemon Garlic Roasted Tofu

🧾 Ingredients

  • 14 oz firm or extra-firm tofu (pressed & cubed)
  • 2 tbsp olive oil
  • 3–4 cloves garlic (minced)
  • 2 tbsp fresh lemon juice 🍋
  • 1 tsp lemon zest
  • 1 tbsp soy sauce or tamari
  • 1 tbsp nutritional yeast (optional, for cheesy flavor)
  • ½ tsp paprika
  • ½ tsp black pepper
  • Salt to taste
  • 2 tbsp fresh parsley (chopped)

👩‍🍳 Instructions

  1. Press & prep tofu
    Remove excess water → cut into cubes
  2. Mix marinade
    Whisk oil, garlic, lemon juice/zest, soy sauce, spices
  3. Coat tofu
    Toss until evenly covered
  4. Roast
    Spread on lined tray
    Bake at 400°F (200°C) for 25–30 min
    Flip halfway for even crisp
  5. Finish
    Sprinkle parsley + extra lemon squeeze
