Vegan Lemon Garlic Roasted Tofu

🧾 Ingredients
- 14 oz firm or extra-firm tofu (pressed & cubed)
- 2 tbsp olive oil
- 3–4 cloves garlic (minced)
- 2 tbsp fresh lemon juice 🍋
- 1 tsp lemon zest
- 1 tbsp soy sauce or tamari
- 1 tbsp nutritional yeast (optional, for cheesy flavor)
- ½ tsp paprika
- ½ tsp black pepper
- Salt to taste
- 2 tbsp fresh parsley (chopped)
👩🍳 Instructions
- Press & prep tofu
Remove excess water → cut into cubes - Mix marinade
Whisk oil, garlic, lemon juice/zest, soy sauce, spices - Coat tofu
Toss until evenly covered - Roast
Spread on lined tray
Bake at 400°F (200°C) for 25–30 min
Flip halfway for even crisp - Finish
Sprinkle parsley + extra lemon squeeze
