Strawberry Chicken

Strawberry Chicken
Jump to Recipe

This is the chicken I make when strawberries are ripe and I want dinner to surprise people. Chicken breasts get a hard sear, sliced the way you see in the photo, then a warm balsamic strawberry topping goes over the top with torn basil. The glaze drips down and pools on the plate. That dark shine is the whole look.

The topping is the point. Strawberries soften in balsamic and honey until they are just warm, sweet with a sharp edge, the ruby-red pile you see on the chicken. It should look juicy, not raw and not jammy. One minute too long and you lose the fresh bite.

It feeds four, one breast each with plenty of topping. Serve it as soon as the topping is warm. Strawberries go from perfect to mushy fast, and the shine in the photo fades.

Ingredients

Instructions

  1. Pound the chicken breasts to an even thickness, about 3/4 inch. Pat dry. Rub with olive oil, Italian seasoning, garlic powder, salt, and pepper.
  2. Heat a large skillet over medium-high. Sear the chicken 5 to 6 minutes per side, until golden and the juices run clear (165°F inside). Rest 5 minutes, then slice.
  3. While the chicken rests, warm 1 Tbsp olive oil in a small pan over medium. Add the strawberries, balsamic, honey, and salt. Cook 2 to 3 minutes, stirring gently, until the berries soften and the liquid turns syrupy. Do not let them collapse.
  4. Stir in half the torn basil. Take off the heat.
  5. Fan the sliced chicken on plates. Spoon the warm strawberry topping over it. Finish with the remaining basil and a pinch of flaky sea salt. Serve right away.

Notes & Tips

  1. Even thickness. Pound the thick end down so the whole breast cooks at the same pace.
  2. Rest the chicken. Five minutes keeps the juices in. Slice too soon and they run out onto the board.
  3. Warm, not cooked. The strawberries should glisten and hold their shape.
  4. Flaky salt at the end. It makes the sweet pop and the plate look like the photo.

  7. Fridge: 2 days in a sealed container. Keep the topping separate if you can.
  8. Best the night it is made. The topping softens overnight and the basil darkens.
  9. Nutrition is an estimate from chicken breast, strawberries, balsamic, honey, and olive oil. Berry sweetness varies by season.
  10. The Secret to Strawberries That Shine
  11. Heat and speed. The topping in the photo is glossy because the berries hit a hot pan and came off in under three minutes. That is enough to release their juices and melt the honey into a syrup, but not enough to cook them down. Stir once or twice, watch for the shine, and pull the pan the moment the liquid coats a spoon.

Variations & serving ideas

  • No strawberries: raspberries or blackberries, same method. They break down faster, so cook 1 minute less.
  • No chicken breast: thighs. Sear 6 to 7 minutes per side.
  • No honey: maple syrup, same amount.
  • No basil: mint. Different, but it works with the berries.
  • Heartier: serve over arugula or a bed of farro. The juices become the dressing.

Frequently asked questions

Can I use frozen strawberries?

Yes, but thaw and drain them first. Frozen berries carry a lot of water, and the topping turns soupy instead of syrupy. Pat them dry before they hit the pan.

Is this sweet or savory?

Both. The berries and honey bring sweet, the balsamic and salt bring sharp. It reads as a savory main with a sweet edge, not dessert.

Can I grill the chicken instead?

Yes. Grill over medium-high 5 to 6 minutes per side. Rest, slice, and top the same way. The char adds a smoky note the pan version does not have.
