Chicken Rice Stack

Chicken Rice Stack
Jump to Recipe

This is the stack I make when I want dinner to look impressive with zero fuss. Warm rice gets packed into a ring or a cup, avocado slices go over it, and glazed chicken cubes pile on top. The stack holds its shape when you lift the ring, the way it does in the photo, tall and clean with the layers showing.

The glaze is the point. A simple soy and honey glaze thickens in the pan until it coats the chicken in a shine, the dark glossy look you see on top. It drips down the sides onto the plate. That drip is not a mistake. It is the best part.

It feeds four, one stack each. A small bowl or a measuring cup works as the mold. Serve it right away. The stack softens as it sits, and the clean lines in the photo are gone.

Ingredients

Instructions

  1. Cook the rice in the salted water until tender, about 15 minutes. Keep it warm and covered.
  2. Pat the chicken dry. Season with salt and pepper. Heat the olive oil in a large skillet over medium-high. Sear the chicken 6 to 8 minutes, turning, until golden and cooked through. Move to a plate.
  3. Lower the heat to medium. Add the soy sauce, honey, rice vinegar, ginger, and garlic to the same pan. Simmer 2 minutes.
  4. Stir in the cornstarch slurry. Simmer 1 to 2 minutes, until the glaze thickens and coats a spoon. Return the chicken and toss to glaze every piece.
  5. To build each stack, press a scoop of warm rice firmly into a greased 1-cup measuring cup or ring mold. Layer avocado slices over it, then invert onto a plate.
  6. Pile glazed chicken on top. Drizzle with extra glaze from the pan. Scatter sesame seeds and herbs. Serve right away.

Notes & Tips

  1. Pack the rice tight. A loose mold is what makes the stack slump.
  2. Glaze on medium, not high. Honey burns fast and turns bitter.
  3. Slice the avocado last. It browns if it waits around.
  4. Oil the mold. The rice releases clean and the sides stay smooth.
  5. Nutrition: Per serving (1 stack). Estimate, with chicken breast.
  6. Nutrition: Net carbohydrates: 73g
  7. Fridge: 2 days, but store the parts separately. Assembled stacks do not reheat well.
  8. Best the hour it is built. Rice hardens in the fridge and avocado browns.
  9. Nutrition is an estimate from chicken breast, rice, avocado, honey, and soy sauce. Chicken thighs run higher on fat and calories.
  10. The Secret to a Stack That Holds
  11. Warm, tight rice. The stack in the photo stands because the rice went into the mold hot and got pressed down hard. Cold or loosely packed rice is what makes a stack lean and fall apart. Fill the mold in two scoops, pressing each one down, and run a knife around the edge before you lift.

Variations & serving ideas

  • No chicken: shrimp cook in 3 minutes and take the same glaze.
  • No honey: maple syrup, same amount. Slightly different shine, same idea.
  • No soy: coconut aminos, 1 to 1.
  • Extra crunch: cucumber slices in the avocado layer.
  • Higher protein: double the chicken and skip the second avocado.

Frequently asked questions

What do I use as a mold?

A 1-cup dry measuring cup works. Grease it lightly, pack the rice in, then flip it onto the plate. A wide-mouth mason jar ring or a cleaned tuna can with both ends cut off works too.

Can I use brown rice?

Yes. It holds its shape even better. Cook it fully first and keep it warm. The texture is chewier, but the stack is sturdier.

Can I make the chicken ahead?

Yes, up to 2 days. Refrigerate it in the glaze. Reheat gently in a skillet with a splash of water until the glaze loosens and shines again. Build the stacks fresh.
