Creamy Salmon
This is the salmon I make when I want one pan to do everything. The fillets get a hard sear first, the golden crust you see in the photo, then they rest while mushrooms and garlic build the sauce in the same pan. Cream goes in last. The fillets finish right in the sauce, which is how they get that gloss on top.
The sauce is the point. It coats the back of a spoon and pools around the salmon, the way it looks in the photo, with the mushroom slices and the green flecks of parsley all through it. It should look silky, not broken. Medium-low heat is what keeps it that way.
It feeds four, one fillet each with plenty of sauce to spoon over. Serve it as soon as the salmon is cooked through. It does not wait well, and the shine in the photo fades fast.

Ingredients
Instructions
- Pat the salmon dry. Season with salt, pepper, and paprika.
- Heat the olive oil in a large skillet over medium-high. Sear the salmon 4 minutes per side, until golden and just cooked through. Move to a plate.
- Lower the heat to medium. Add the butter and mushrooms to the same pan. Cook 4 to 5 minutes, until the mushrooms are browned.
- Add the garlic. Stir 30 seconds until fragrant. Pour in the broth and scrape up the browned bits. Simmer 2 minutes.
- Stir in the cream, lemon juice, and Parmesan. Simmer gently 2 to 3 minutes, until the sauce thickens enough to coat a spoon. Do not boil it hard.
- Return the salmon to the pan. Spoon the sauce over the fillets. Simmer 2 minutes to heat through. Scatter the parsley and serve.
Notes & Tips
- Sear skin side down first if the fillets have skin. It crisps up and holds the fish together.
- Do not crowd the pan. Four fillets need space, or they steam instead of sear.
- Cream on medium-low. A hard boil splits a cream sauce.
- Parmesan off the brand block. Pre-grated cheese can make the sauce grainy.

- Fridge: 2 days in a sealed container. Reheat gently in a skillet over low heat with a splash of cream or broth.
- Best the night it is made. Cream sauces tighten in the fridge and never look quite as glossy again.
- Nutrition is an estimate from salmon, cream, mushrooms, butter, Parmesan, and olive oil. Fillet size carries the biggest swing.
- The Secret to a Sauce That Does Not Split
- Heat control after the cream goes in. The sauce in the photo is smooth because it never saw more than a gentle simmer once the dairy was added. A rolling boil is what breaks a cream sauce into oil and curds. If it starts to bubble hard, pull the pan off the heat for a minute, then finish low.
Variations & serving ideas
- No salmon: arctic char or steelhead trout cook the same way.
- Lighter: use half-and-half instead of cream. The sauce will be thinner. Simmer it a little longer.
- No mushrooms: a handful of baby spinach wilted into the sauce at the end.
- No dairy: coconut cream and olive oil. Different flavor, same method.
- Extra green: asparagus tips or peas tossed into the sauce with the salmon.

Frequently asked questions
How do I know when the salmon is done?
It flakes easily with a fork and the center is just opaque. For a 1-inch fillet, 4 minutes per side at medium-high is enough. Pull it a touch early. It keeps cooking in the sauce.
Can I use frozen salmon?
Yes. Thaw it fully first, then pat it very dry. Sear the same way. Wet fillets steam, and you lose the golden crust.
Can I make the sauce ahead?
The mushroom base, yes. Make it through step 4 and refrigerate. Reheat, add the cream fresh, then cook the salmon and finish. Cream added a day ahead reheats grainy, so add it at the end.
