  • 2 cups (200g) rolled oats (divided — 1½ cups for the base + ½ cup for topping)
  • ½ cup (130g) natural peanut butter or almond butter
  • ⅓ cup (80ml) maple syrup or agave nectar
  • ¼ cup (25g) cocoa powder or cacao powder
  • ¼ cup (60ml) melted coconut oil (or more nut butter for oil-free)
  • 1 tsp vanilla extract
  • ¼ tsp sea salt
  • Optional add-ins: ⅓ cup vegan chocolate chips (melted into the mix or sprinkled on top), chopped nuts, shredded coconut, or puffed rice for extra crunch

Instructions:

  1. Prep the pan: Line an 8×8-inch (or similar) baking pan with parchment paper, leaving overhang for easy removal.
