No-Bake Vegan Chocolate Crunch Bars Recipe

Ingredients:
- 2 cups (200g) rolled oats (divided — 1½ cups for the base + ½ cup for topping)
- ½ cup (130g) natural peanut butter or almond butter
- ⅓ cup (80ml) maple syrup or agave nectar
- ¼ cup (25g) cocoa powder or cacao powder
- ¼ cup (60ml) melted coconut oil (or more nut butter for oil-free)
- 1 tsp vanilla extract
- ¼ tsp sea salt
- Optional add-ins: ⅓ cup vegan chocolate chips (melted into the mix or sprinkled on top), chopped nuts, shredded coconut, or puffed rice for extra crunch
Instructions:
- Prep the pan: Line an 8×8-inch (or similar) baking pan with parchment paper, leaving overhang for easy removal.
- Make the base: In a large bowl, mix the nut butter, maple syrup, melted coconut oil, cocoa powder, vanilla, and salt until smooth and glossy.
- Add oats: Stir in 1½ cups of the rolled oats until fully coated. The mixture should be thick and sticky.
