High-Protein Vegan Carrot Cake Energy Bites

These high-protein vegan carrot cake bites are naturally sweet, packed with fiber, and perfect for grab-and-go snacks 🥕✨ No baking required!


🧾 Ingredients

  • 1 cup rolled oats
  • 1/2 cup walnuts (or almonds)
  • 1/2 cup grated carrot
  • 1/4 cup raisins or dates
  • 2 tbsp nut butter (peanut/almond)
  • 2 tbsp plant-based protein powder (optional but boosts protein 💪)
  • 1 tbsp maple syrup (optional)
  • 1/2 tsp cinnamon
  • 1/4 tsp nutmeg
  • Pinch of salt
  • 1–2 tbsp water (if needed)

👩‍🍳 Instructions

  1. Blend dry ingredients
    Add oats + nuts to a food processor → pulse into coarse crumbs
  2. Add the rest
    Add carrot, raisins, nut butter, spices, protein powder
  3. Process
    Blend until sticky dough forms (add water if too dry)
  4. Roll
    Form into small bite-sized balls
  5. Chill
    Refrigerate 20–30 minutes to firm up
