High-Protein Vegan Carrot Cake Energy Bites
These high-protein vegan carrot cake bites are naturally sweet, packed with fiber, and perfect for grab-and-go snacks 🥕✨ No baking required!
🧾 Ingredients
- 1 cup rolled oats
- 1/2 cup walnuts (or almonds)
- 1/2 cup grated carrot
- 1/4 cup raisins or dates
- 2 tbsp nut butter (peanut/almond)
- 2 tbsp plant-based protein powder (optional but boosts protein 💪)
- 1 tbsp maple syrup (optional)
- 1/2 tsp cinnamon
- 1/4 tsp nutmeg
- Pinch of salt
- 1–2 tbsp water (if needed)
👩🍳 Instructions
- Blend dry ingredients
Add oats + nuts to a food processor → pulse into coarse crumbs - Add the rest
Add carrot, raisins, nut butter, spices, protein powder - Process
Blend until sticky dough forms (add water if too dry) - Roll
Form into small bite-sized balls - Chill
Refrigerate 20–30 minutes to firm up
