Ingredients
Loaves (6)
- 1 1/2 lb (680g) ground chicken (93%)
- 1 large egg
- 1/2 cup grated Parmesan
- 1/4 cup almond flour
- 3 garlic cloves, minced
- 2 Tbsp chopped parsley
- 1 tsp Italian seasoning
- 1/2 tsp onion powder
- 3/4 tsp salt + 1/4 tsp black pepper
Garlic glaze
- 2 Tbsp butter, melted
- 1 garlic clove, minced
- 2 Tbsp chicken broth
- 1 Tbsp extra Parmesan
- 1/2 tsp dried parsley or Italian seasoning, for the tops
Swaps
- Turkey: Same weight. Add 1 tsp oil so it does not dry out.
- Pork rind crumbs: Use 1/4 cup instead of almond flour.
- Muffin tin: Bake in 6 muffin cups if you want taller loaves.
- Air fryer: 370 F for 14 to 16 minutes. Glaze at minute 10.
Instructions
| 1 | Heat and mix. Heat oven to 400 F (205 C). Line a sheet with parchment. Mix chicken, egg, Parmesan, almond flour, garlic, parsley, Italian seasoning, onion powder, salt, and pepper until just combined. |
| 2 | Shape. Divide into 6 equal mounds. Shape into short, thick loaves, about 2 1/2 inches wide, like the photo. Leave space between them. |
| 3 | Start the bake. Bake 12 minutes. Stir melted butter, garlic, and broth for the glaze. |
| 4 | Glaze. Brush the loaves with the garlic butter. Sprinkle extra Parmesan and dried parsley. Bake 8 to 10 minutes more, until 165 F in the center and the tops are gold. |
| 5 | Rest and serve. Rest 3 minutes. Spoon the amber juices from the sheet over the loaves. Serve 1 loaf per plate, or 2 if you are hungry. |

- Wet hands shape chicken without it sticking.
- Leave space on the sheet so the sides brown, not steam.
- A 165 F center is done. Past that, chicken dries out.
