This crustless pumpkin pie tastes just like the classic—smooth, spiced, and comforting—but without the crust, oil, or sugar overload. And yes… it’s ZERO points on most WW plans!
Ingredients
- 1 can (15 oz) 100% pure pumpkin
- 1 cup unsweetened almond milk (or skim milk)
- 2 large eggs
- 2 tbsp sugar substitute (Monkfruit, Stevia, or Swerve)
- 1 tsp vanilla extract
- 1 tbsp pumpkin pie spice
- ½ tsp cinnamon
- ½ tsp baking powder
- Pinch of salt
Instructions
- Preheat oven to 350°F (175°C).
- Lightly spray a 9×13 baking dish or foil pan with nonstick spray.
- In a large bowl, whisk together:
- pumpkin
- almond milk
- eggs
- sweetener
- vanilla
- pumpkin pie spice
- cinnamon
- baking powder
- salt
- Pour mixture into the prepared pan and smooth the top.
- Bake 35–45 minutes, or until the center is set and the edges pull slightly away from the pan.
- Let cool completely before slicing. Chill for best texture!
