Zero Point Crustless Pumpkin Pie

This crustless pumpkin pie tastes just like the classic—smooth, spiced, and comforting—but without the crust, oil, or sugar overload. And yes… it’s ZERO points on most WW plans!


Ingredients

  • 1 can (15 oz) 100% pure pumpkin
  • 1 cup unsweetened almond milk (or skim milk)
  • 2 large eggs
  • 2 tbsp sugar substitute (Monkfruit, Stevia, or Swerve)
  • 1 tsp vanilla extract
  • 1 tbsp pumpkin pie spice
  • ½ tsp cinnamon
  • ½ tsp baking powder
  • Pinch of salt

Instructions

  1. Preheat oven to 350°F (175°C).
  2. Lightly spray a 9×13 baking dish or foil pan with nonstick spray.
  3. In a large bowl, whisk together:
    • pumpkin
    • almond milk
    • eggs
    • sweetener
    • vanilla
    • pumpkin pie spice
    • cinnamon
    • baking powder
    • salt
  4. Pour mixture into the prepared pan and smooth the top.
  5. Bake 35–45 minutes, or until the center is set and the edges pull slightly away from the pan.
  6. Let cool completely before slicing. Chill for best texture!
