Vegan Spinach & “Feta” Puff Pastry Squares
These vegan spinach & feta-style pastry squares are flaky, golden, and packed with creamy, savory filling 😍🥬 Perfect appetizer or snack!
🧾 Ingredients
🥐 Filling
- 2 cups spinach (chopped)
- 1 cup vegan feta (crumbled)
- 2 cloves garlic (minced)
- ¼ cup onion (finely chopped)
- 1 tbsp olive oil
- Salt & pepper
- 1 tsp dried dill (optional)
🥧 Pastry
- 1 sheet vegan puff pastry (thawed)
- 1 tbsp plant milk (for brushing)
👩🍳 Instructions
- Preheat oven to 190°C (375°F)
- Sauté onion + garlic in olive oil
- Add spinach → cook until wilted
- Remove from heat, mix in vegan feta + seasoning
- Roll out puff pastry, cut into squares
- Add filling, fold or layer another sheet on top
- Seal edges, brush with plant milk
- Bake 20–25 mins until golden & crispy
