Vegan Spinach & “Feta” Puff Pastry Squares

These vegan spinach & feta-style pastry squares are flaky, golden, and packed with creamy, savory filling 😍🥬 Perfect appetizer or snack!


🧾 Ingredients

🥐 Filling

  • 2 cups spinach (chopped)
  • 1 cup vegan feta (crumbled)
  • 2 cloves garlic (minced)
  • ¼ cup onion (finely chopped)
  • 1 tbsp olive oil
  • Salt & pepper
  • 1 tsp dried dill (optional)

🥧 Pastry

  • 1 sheet vegan puff pastry (thawed)
  • 1 tbsp plant milk (for brushing)

👩‍🍳 Instructions

  1. Preheat oven to 190°C (375°F)
  2. Sauté onion + garlic in olive oil
  3. Add spinach → cook until wilted
  4. Remove from heat, mix in vegan feta + seasoning
  5. Roll out puff pastry, cut into squares
  6. Add filling, fold or layer another sheet on top
  7. Seal edges, brush with plant milk
  8. Bake 20–25 mins until golden & crispy
