Vegan Lemon Bars

🧾 Ingredients

🍪 Crust

  • 1 cup flour
  • ¼ cup powdered sugar
  • ½ cup vegan butter

🍋 Filling

  • 1 cup sugar
  • 2 tbsp cornstarch
  • ½ cup lemon juice 🍋
  • 1 tbsp lemon zest
  • 1 cup plant milk 🌱
  • ½ tsp turmeric (for color, optional)

👩‍🍳 Instructions

  1. Preheat oven to 180°C (350°F)
  2. Mix crust → press into pan
  3. Bake crust 15 minutes
  4. Whisk filling ingredients
  5. Pour over crust
  6. Bake another 20–25 minutes
  7. Cool completely → chill → slice
