Vegan Lemon Bars

🧾 Ingredients
🍪 Crust
- 1 cup flour
- ¼ cup powdered sugar
- ½ cup vegan butter
🍋 Filling
- 1 cup sugar
- 2 tbsp cornstarch
- ½ cup lemon juice 🍋
- 1 tbsp lemon zest
- 1 cup plant milk 🌱
- ½ tsp turmeric (for color, optional)
👩🍳 Instructions
- Preheat oven to 180°C (350°F)
- Mix crust → press into pan
- Bake crust 15 minutes
- Whisk filling ingredients
- Pour over crust
- Bake another 20–25 minutes
- Cool completely → chill → slice
