This vegan cabbage & chickpea pie is crispy on the outside, soft inside, and packed with plant protein 💪🥬
🧾 Ingredients
- 3 cups cabbage (shredded)
- 1 cup carrots (grated)
- 1 cup chickpea flour
- 1 cup water
- 2 tbsp nutritional yeast
- 1 tsp garlic powder
- ½ tsp turmeric (optional)
- Salt & pepper
- 1 tbsp olive oil
👩🍳 Instructions
- Preheat oven to 375°F (190°C)
- Mix chickpea flour + water → smooth batter
- Add seasoning + nutritional yeast
- Stir in cabbage & carrots
- Pour into lined baking dish
- Drizzle oil on top
- Bake 35–40 mins until golden
- Cool slightly → slice into squares
