Vegan Cabbage & Chickpea Pie

This vegan cabbage & chickpea pie is crispy on the outside, soft inside, and packed with plant protein 💪🥬


🧾 Ingredients

  • 3 cups cabbage (shredded)
  • 1 cup carrots (grated)
  • 1 cup chickpea flour
  • 1 cup water
  • 2 tbsp nutritional yeast
  • 1 tsp garlic powder
  • ½ tsp turmeric (optional)
  • Salt & pepper
  • 1 tbsp olive oil

👩‍🍳 Instructions

  1. Preheat oven to 375°F (190°C)
  2. Mix chickpea flour + water → smooth batter
  3. Add seasoning + nutritional yeast
  4. Stir in cabbage & carrots
  5. Pour into lined baking dish
  6. Drizzle oil on top
  7. Bake 35–40 mins until golden
  8. Cool slightly → slice into squares
