Sweet Potato Fritters

Jump to Recipe

This is the stack I make when I want something crisp and I still want it to count as a vegetable plate. Grated sweet potato is squeezed dry, mixed with a little egg and spice, and cooked in olive oil until the edges go gold. Avocado sauce goes between the cakes and on top, with avocado cubes, parsley, and chili, which is the green layer and the red flecks in the photo. A thin drizzle of olive oil or a touch of honey is the shine running down the stack.

The squeeze is the recipe. Wet potato steams and the cake stays soft in the middle. Salt it, wait, then wring it in a towel until it feels almost dry. Thin cakes brown. Thick ones burn outside and stay raw inside. Do not move them for the first 2 minutes. The crust sticks, then releases. Sauce after they cool a minute, or it slides off.

It makes about 8 cakes, enough for four as a side or two as a meal with a salad. They are best the hour they are cooked. The crust softens if they sit covered.

Ingredients

  • Fritters
  • Sauce and top

Instructions

  1. Toss the grated sweet potato with the salt. Let it sit 10 minutes. Squeeze it hard in a towel until it is almost dry.
  2. Mix the squeezed potato with the egg, flour, garlic powder, pepper, and paprika.
  3. Heat 1 Tbsp olive oil in a skillet over medium. Drop 1/4-cup mounds and flatten them to about 1/2 inch. Cook 3 minutes a side, until deep gold. Add the second tablespoon of oil for the next batch.
  4. Mash the sauce avocado with lemon juice, olive oil, garlic, salt, and water until it spoons.
  5. Stack the fritters with sauce between them. Top with diced avocado, parsley, chili flakes, and a thin drizzle. Serve right away.

Notes & Tips

  1. Squeeze until the towel is wet and the potato feels dry. That is the crisp.
  2. Medium heat. High heat burns the edge before the center sets.
  3. Do not move them early. The crust needs a minute to form.
  4. Sauce after a 1-minute rest. Hot cakes melt it off the top.
  5. Nutrition: Per serving (2 fritters and sauce). Estimate, skillet method.
  6. Nutrition: Net carbohydrates: 22g
  7. Nutrition: WW estimate: 8 points on the current plan (oil and avocado carry the points; sweet potato is the rest)
  8. Fridge: 2 days. Re-crisp in a hot skillet or a 400 F oven for 6 minutes. The microwave makes them soft.
  9. Freeze the cooked cakes, no sauce, up to 1 month. Reheat from frozen in a hot oven.
  10. Nutrition is an estimate from sweet potato, egg, olive oil, and avocado. The oven method uses less oil.
  11. ## The Secret to a Crisp Cake
  12. Salt, wait, and squeeze. Grated sweet potato holds a surprising amount of water. If that water stays in the mix, the cake steams and the center never sets. Ten minutes with salt, then a hard wring in a clean towel, is what gives you the gold edge in the photo. Do not skip it to save time.

Variations & serving ideas

  • No egg: use 1 Tbsp ground flax mixed with 2 Tbsp water. The cakes are a little more fragile.
  • Air fryer: 375 F (190 C) for 12 minutes, flipped once. Brush with oil.
  • Oven: 425 F (220 C) for 20 minutes, flipped once, on parchment.
  • No avocado: Greek yogurt with lemon and garlic is the stand-in sauce.
  • Spicier: add the chili flakes to the potato mix, not only on top.

Frequently asked questions

Can I bake them instead of pan-fry?

Yes. Brush with oil and bake at 425 F (220 C) for about 20 minutes, flipping once. They will be a little less crisp than the skillet and still good.

Can I make them ahead?

Cook the cakes up to a day ahead. Re-crisp before you serve them. Make the avocado sauce the day you eat it. It browns if it sits.

How do I make it a meal?

Two cakes, a fried egg, and a handful of greens. Or add a spoon of black beans on the side. The stack alone is a side for four.
