Ingredients (Serves 6)
- 2 lbs (900g) ground beef
- 4 medium zucchini, sliced thin
- 1 onion, diced
- 2 cloves garlic, minced
- 1 (14.5 oz) can diced tomatoes (drained)
- 2 tsp Italian seasoning
- Salt & pepper to taste
- 2 cups (200g) shredded mozzarella or cheddar cheese
- Fresh parsley for garnish
Instructions
- Preheat oven to 375°F (190°C).
- Brown ground beef with onion and garlic in a large skillet. Drain fat.
- Stir in diced tomatoes, Italian seasoning, salt, and pepper. Simmer 5 minutes.
- In a baking dish, layer zucchini slices, beef mixture, and cheese. Repeat layers, ending with cheese on top.
- Bake 25–35 minutes until zucchini is tender and cheese is bubbly and golden.
- Let rest 10 minutes before serving. Garnish with parsley.
