Ingredients (Serves 6)

  • 2 lbs (900g) ground beef
  • 4 medium zucchini, sliced thin
  • 1 onion, diced
  • 2 cloves garlic, minced
  • 1 (14.5 oz) can diced tomatoes (drained)
  • 2 tsp Italian seasoning
  • Salt & pepper to taste
  • 2 cups (200g) shredded mozzarella or cheddar cheese
  • Fresh parsley for garnish

Instructions

  1. Preheat oven to 375°F (190°C).
  2. Brown ground beef with onion and garlic in a large skillet. Drain fat.
  3. Stir in diced tomatoes, Italian seasoning, salt, and pepper. Simmer 5 minutes.
  4. In a baking dish, layer zucchini slices, beef mixture, and cheese. Repeat layers, ending with cheese on top.
  5. Bake 25–35 minutes until zucchini is tender and cheese is bubbly and golden.
  6. Let rest 10 minutes before serving. Garnish with parsley.
