  • 1 tsp salt, for drawing water

  • 1 1/2 lb (680g) lean ground beef (93%)
  • 1/2 small onion, diced
  • 1 small red bell pepper, diced
  • 3 garlic cloves, minced
  • 1/2 cup sugar-free marinara or crushed tomatoes
  • 1 tsp Italian seasoning
  • 1/2 tsp salt + 1/4 tsp black pepper

Cheese and binder

  • 2 large eggs
  • 1/2 cup ricotta or cottage cheese, blended smooth
  • 1 1/2 cups shredded mozzarella
  • 1/2 cup shredded cheddar
  • 2 Tbsp chopped parsley

Swaps

  • Turkey: Same weight. Add 1 tsp oil so it browns.
  • No pepper: Skip it. Tomato still gives the red flecks.
  • Cottage only: Blend 1/2 cup cottage instead of ricotta.
