  • ½ cup (115g) butter or coconut oil
  • ⅔ cup (130g) allulose (key for proper caramel texture)
  • ½ cup (120ml) heavy cream
  • 1 tsp vanilla extract
  • ½ tsp salt (or flaky sea salt for topping)
  • ⅔ cup (70g) vanilla or unflavored whey protein powder
  • ½ cup (50g) almond flour or coconut flour
  • Optional: ¼ cup chopped nuts (pecans/almonds) for texture

Instructions

  1. In a medium saucepan over medium heat, melt butter. Add allulose and stir continuously until it dissolves and starts to bubble and caramelize (about 4–6 minutes — it will turn golden brown).
  2. Slowly whisk in heavy cream (it will bubble up). Add vanilla and salt. Simmer gently 2–3 minutes until thickened slightly. Remove from heat.
