Ingredients (Serves 6)

  • 2 lbs (900g) boneless, skinless chicken breasts or thighs, cut into bite-sized pieces
  • 1 (14 oz) can artichoke hearts, drained and chopped
  • 8–10 oz (225–280g) fresh spinach, roughly chopped (or 1 package frozen, thawed and squeezed dry)
  • 8 oz (225g) full-fat cream cheese, softened
  • ½ cup (120ml) heavy cream or full-fat Greek yogurt
  • 1 cup (100g) shredded mozzarella cheese (divided)
  • ½ cup (50g) grated Parmesan cheese
  • 3–4 cloves garlic, minced
  • 1 tsp onion powder
  • 1 tsp Italian seasoning
  • Salt & black pepper to taste
  • Optional: red pepper flakes for heat, extra cheese for topping

Instructions

  1. Preheat oven to 375°F (190°C). Lightly grease a 9×13 baking dish.
  2. In a large skillet over medium heat, cook the chicken pieces with salt, pepper, and garlic until lightly browned (about 5–7 minutes). You don’t need to cook it all the way through.
  3. Add spinach and chopped artichokes. Cook until spinach wilts (2–3 minutes).
  4. Reduce heat to low. Stir in cream cheese, heavy cream/Greek yogurt, ½ cup mozzarella, Parmesan, onion powder, and Italian seasoning. Mix until the cheeses melt and everything is creamy. Adjust seasoning.
  5. Transfer the mixture to the prepared baking dish. Top with remaining mozzarella (and extra Parmesan if desired).
  6. Bake 20–25 minutes until bubbly and golden on top. Broil for the last 2 minutes for extra browning if you like.
  7. Let rest 5 minutes before serving. Garnish with fresh parsley or red pepper flakes.
