Ingredients (Makes 16–20 squares)
- 1 cup (260g) natural sugar-free peanut butter (or almond butter)
- ½ cup (115g) coconut oil or butter, melted
- ⅓ cup (35g) vanilla whey protein powder
- ⅓ cup (65g) allulose or powdered monk fruit sweetener
- 1 tsp vanilla extract
- Pinch of salt
- Optional: chopped peanuts for topping
Instructions
- Line an 8×8 pan with parchment paper.
- In a bowl, mix peanut butter, melted coconut oil, protein powder, sweetener, vanilla, and salt until completely smooth.
- Pour into the prepared pan. Smooth the top and create swirls with a knife or spoon if desired.
- Sprinkle with chopped peanuts (optional).
- Refrigerate 1–2 hours until firm. Cut into squares and enjoy!
