Ingredients (Serves 10–12 slices)

Crust:

  • 1½ cups (150g) almond flour
  • ⅓ cup (75g) butter, melted
  • 2 tbsp allulose or monk fruit sweetener
  • ½ tsp cinnamon (optional)
  • Pinch of salt

Filling:

  • 16 oz (450g) full-fat cream cheese, softened
  • ½ cup (50g) vanilla whey protein powder
  • ⅔ cup (130g) allulose or powdered monk fruit sweetener
  • 1 cup (240ml) heavy whipping cream
  • 1 tsp vanilla extract
  • ½ cup (60g) chopped pecans
  • ⅓ cup (60g) sugar-free chocolate chips or chopped sugar-free chocolate (optional but recommended)

Topping:

  • ½–¾ cup pecan halves
  • 2–3 tbsp chopped sugar-free chocolate
  • Extra chopped pecans

Instructions

  1. Make the crust: Mix almond flour, melted butter, sweetener, cinnamon, and salt until it resembles wet sand. Press firmly into a 9-inch pie dish or springform pan. Chill in the fridge while preparing the filling.
  2. Make the filling: Beat softened cream cheese and protein powder until smooth. Add sweetener and vanilla; beat until creamy.
  3. In a separate bowl, whip heavy cream to stiff peaks. Gently fold the whipped cream into the cream cheese mixture.
