Ingredients (Makes 16–20 bites)
- 1 cup (225g) full-fat cottage cheese
- ½ cup (50g) chocolate or vanilla whey protein powder
- ⅓ cup (30g) unsweetened cocoa powder
- ⅓ cup (65g) allulose or monk fruit sweetener (adjust to taste)
- 2 tbsp almond butter or peanut butter (no sugar added)
- 1 tsp vanilla extract
- Pinch of salt
Chocolate Coating:
- ¾ cup (135g) sugar-free chocolate chips (Lily’s or similar)
- 1 tbsp coconut oil
Optional Mix-ins: 2–3 tbsp sugar-free chocolate chips or chopped walnuts for texture
Instructions
- Blend the cottage cheese in a food processor or blender until completely smooth (no lumps).
- Add protein powder, cocoa powder, sweetener, almond butter, vanilla, and salt. Blend until a thick, fudgy brownie batter forms. If too thick, add 1 tsp water or melted coconut oil.
- Fold in optional chocolate chips or nuts. Scoop tablespoon-sized portions and roll into balls. Place on a parchment-lined tray and freeze for 15–20 minutes to firm up.
- Melt sugar-free chocolate chips with coconut oil in the microwave in 20-second intervals, stirring until smooth.
- Dip each chilled ball into the melted chocolate, letting excess drip off. Place back on parchment.
- Refrigerate or freeze until chocolate sets (10–15 minutes).
