Ingredients
Beef (4 jars)
- 1 1/4 lb (570g) lean ground beef (90/10)
- 1 Tbsp chili powder
- 1 tsp cumin + 1 tsp smoked paprika + 1/2 tsp garlic powder
- 1/2 tsp salt + 1/2 tsp black pepper
Creamy taco dressing
- 1/2 cup plain Greek yogurt
- 2 Tbsp mayonnaise
- 1 Tbsp lime juice
- 1 tsp chili powder + 1/2 tsp cumin
- Pinch of salt
Layers
- 4 wide-mouth pint (16 oz) mason jars
- 1 small onion, diced
- 1/2 cup dill pickle slices, chopped
- 1 cup diced tomato, seeds shaken out
- 1 1/2 cups shredded cheddar
- 6 cups shredded iceberg lettuce
Swaps
- Turkey: Same weight. Leaner, a little less fat.
- No pickle: Use extra onion. The photo has pickle in the middle layer.
- Bowl only: Skip the jars. Toss everything in 4 bowls the day you eat.
- Jalapeno: Add sliced jalapeno with the pickle.
Instructions
| 1 | Brown. Cook beef in a skillet on medium-high 7 to 8 minutes, breaking it up. Stir in chili powder, cumin, paprika, garlic powder, salt, and pepper. Drain all the fat. Cool 5 minutes. |
| 2 | Dressing. Stir yogurt, mayo, lime, chili powder, cumin, and salt until smooth. This is the pink layer at the bottom of each jar in the photo. |
| 3 | Layer bottom. Spoon 2 Tbsp dressing into each of 4 pint jars. Add cooled beef, then onion, then pickle, then tomato. Wet toppings stay in the middle so lettuce does not wilt. |

Pro tips
- Dressing first, lettuce last. Reverse that and the greens go soggy by Tuesday.
- Drain the beef hard and cool it. Hot beef wilts everything under it.
- Shake tomato seeds out. Extra juice is what waters down the jar.
- Wide-mouth pints are easier to layer and to eat from than narrow jars.
- No chips. They soak and they jump the carbs past 8g net.
