- 2 Tbsp psyllium husk powder
- 1 Tbsp baking powder
- 2 1/4 tsp instant yeast (1 packet)
- 1/2 tsp salt
- 4 large egg whites (save 1 yolk for the shine)
- 1/4 cup warm unsweetened almond milk (105 to 110 F)
- 2 Tbsp olive oil or melted butter, cooled
- 1 tsp apple cider vinegar
- 1 tsp honey or inulin (feeds the yeast; leftover carbs are tiny)

- Reserved egg yolk + 1 tsp water, for the gold crust

- No whey: Add 3 Tbsp extra almond flour. Protein drops a few grams.
- Cottage boost: Blend 1/4 cup cottage into the wet mix.
- No yeast: Skip yeast and the rise. Bake 22 minutes. Crumb is tighter.
- Loaf pan: Use an 8×4 pan if you do not want a round boule.
Instructions
