Gold stack, butter, a syrup drip – 25 minutes, one skillet

These are protein pancakes, not flour cakes. Almond flour, whey, and cream cheese cook into a pale gold stack with a butter pat and a sugar-free drip, like the plate in the photo. No wheat. Twenty-five minutes.

Eight pancakes. Macros below are for two.

Pancakes: 8

Why you’ll love this stack

  • 22g protein per 2 pancakes – breakfast that holds you
  • Only 5g net carbs – almond flour, no wheat
  • About 25 minutes, one skillet
  • Pale gold, butter, maple drip, like the photo
  • No boxed mix, no sugar syrup required
  • They freeze and reheat

Health notes

  • High protein: Whey, eggs, and cream cheese.
  • Low carb: Almond flour plus allulose if you sweeten the batter.
  • Eight pancakes: Macros are per 2 pancakes, not the stack.
  • Syrup in the photo is sugar-free. Regular maple will add carbs.

Key element – rest the batter, then cook on medium-low

Whey pancakes brown fast and stay raw in the middle if the pan is too hot. Rest the batter 5 minutes so it thickens, then cook on medium-low until bubbles show. Flip once. That is how you get the even gold in the photo.

Ingredients

Instructions

  1. Blend. Blend cream cheese, eggs, whey, almond flour, milk, baking powder, vanilla, salt, and sweetener if using until smooth, 20 seconds. Rest 5 minutes so the batter thickens.
  2. Heat the pan. Warm a nonstick skillet over medium-low. Lightly butter it. Too hot and the cakes burn before they cook through.
  3. Cook. Pour about 1/4 cup batter per pancake. Cook 2 to 3 minutes until the edges set and bubbles show. Flip once. Cook 1 to 2 minutes more until gold, like the photo.
  4. Repeat. Keep cooked cakes on a plate. Butter the pan between batches. You should get 8 pancakes.
  5. Stack and serve. Stack, add a pat of butter, and drizzle sugar-free syrup so it drips down the sides, like the photo. Two pancakes is one serving.

Notes & Tips

  1. Rest the batter. Fresh whey batter is thin and spreads too far.
  2. Medium-low heat. High heat browns the outside and leaves a wet center.
  3. Flip once. Pressing or flipping twice knocks the air out.
  4. A 1/4-cup scoop makes even rounds, like the photo.
  5. Keep them warm in a 200 F oven while you finish the batch.

Variations & serving ideas

  • Butter
  • Sugar-free maple syrup
  • Cottage cheese: Blend 1/3 cup instead of cream cheese.
  • No whey: Add 1 extra egg. Protein drops a little.
  • Coconut flour: Use 2 Tbsp only. It drinks liquid.
  • Unflavored whey: Add 1 extra tsp vanilla and the optional sweetener.
  • Blueberry: Drop 4 to 5 berries on each cake after you pour. Do not stir them into the bowl.
  • Cinnamon: Add 1/2 tsp cinnamon to the batter.
  • Chocolate: Use chocolate whey and 1 Tbsp sugar-free chips.
  • Savory: Skip vanilla and sweetener. Add a pinch of salt and chives. Serve with eggs.

Storage

  • Eat now: Best (Butter and syrup while they are hot)
  • Refrigerator: Up to 3 days (Reheat in a skillet 1 minute per side)
  • Freezer: Up to 2 months (Freeze with parchment between cakes)

Frequently asked questions

Are these pancakes keto-friendly?

Yes. About 5g net carbs per 2 pancakes with almond flour and no wheat. Use sugar-free syrup.

Why are they gummy?

The pan was too hot or you flipped too soon. Medium-low, wait for bubbles, flip once.

Can I use coconut flour?

Only 2 Tbsp. Coconut flour drinks liquid. Start with extra milk if the batter is paste.

Do I need a blender?

It makes the cream cheese disappear. A whisk works if the cream cheese is very soft.

Why rest the batter?

Almond flour hydrates. Five minutes gives thicker cakes that hold a round, like the photo.

Can I make them ahead?

Yes. Cook, cool, freeze with parchment. Reheat in a skillet or toaster.
