High-Protein Keto Pancakes

High-Protein Keto Pancakes

Thick gold stack, a pat of butter – 25 minutes, one skillet

This is a protein pancake, not a flour flapjack. Almond flour, vanilla whey, eggs, and cream cheese cook into a thick gold stack you can fork, like the plate in the photo. Twenty-five minutes. No wheat flour, no sugar syrup required.

Four pancakes. Two pancakes is one serving. Low heat is what cooks the center without burning the top.

Why you’ll love this stack

  • 22g protein per 2 pancakes – breakfast that holds you
  • Only 5g net carbs – almond flour, not wheat
  • About 25 minutes, one skillet
  • Thick gold cakes, like the photo
  • No boxed mix
  • They freeze for weekday mornings

Health notes

  • High protein: Vanilla whey, eggs, and cream cheese.
  • Low carb: Almond flour. No wheat, no sugar.
  • Two pancakes is one serving. Macros are not for the whole stack of four.
  • Regular maple syrup will jump the carbs. Use a sugar-free pour if you want it.

Key element – rest the batter, then cook on medium-low

Almond flour needs a few minutes to hydrate or the cakes stay gritty. Rest 5 minutes. Then cook on medium-low so the center sets before the top burns. Flip once, when bubbles hold and the edges look dry. High heat gives a dark outside and a raw middle.

Ingredients

Batter (4 pancakes / 2 servings)

  • 2 large eggs
  • 2 oz cream cheese, softened
  • 1 scoop (30g) vanilla whey protein
  • 1/2 cup almond flour
  • 1 tsp baking powder
  • 1 Tbsp powdered allulose (optional)
  • 1 tsp vanilla extract
  • 2 Tbsp unsweetened almond milk, plus more if needed
  • Pinch of salt
  • 1 Tbsp butter, for the pan

Swaps

  • Greek yogurt: Use 1/4 cup thick yogurt in place of cream cheese.
  • Unflavored whey: Add 1 extra tsp vanilla and the optional allulose.
  • Coconut flour: Do not 1:1 swap. Use 2 Tbsp coconut flour only, plus 1 extra egg.
  • Dairy-free: Use coconut cream in place of cream cheese. Texture is a little looser.

Instructions

Pro tips

  • Rest the batter 5 minutes. Skipping it leaves a gritty bite.
  • Medium-low heat. High heat burns the outside before the center sets.
  • Flip once. Pressing them flat squeezes out the lift.
  • If the batter is too thick to pour, add milk 1 tsp at a time, not a splash.
  • Wipe the pan between batches so the next cake does not pick up dark bits.
