Whey pancakes brown fast and stay raw in the middle if the pan is too hot. Rest the batter 5 minutes so it thickens, then cook on medium-low until bubbles show. Flip once. That is how you get the even gold in the photo.
Ingredients
Batter (8 pancakes)
- 2 oz (55g) cream cheese, softened
- 3 large eggs
- 1 scoop (30g) vanilla whey protein
- 1/2 cup (56g) almond flour
- 2 Tbsp unsweetened almond milk
- 1 tsp baking powder
- 1 tsp vanilla extract
- 1 Tbsp powdered allulose or monk fruit, optional
- Pinch of salt
- Butter or oil, for the skillet
To serve
- Butter
- Sugar-free maple syrup
Swaps
- Cottage cheese: Blend 1/3 cup instead of cream cheese.
- No whey: Add 1 extra egg. Protein drops a little.
- Coconut flour: Use 2 Tbsp only. It drinks liquid.
- Unflavored whey: Add 1 extra tsp vanilla and the optional sweetener.
Instructions
| 1 | Blend. Blend cream cheese, eggs, whey, almond flour, milk, baking powder, vanilla, salt, and sweetener if using until smooth, 20 seconds. Rest 5 minutes so the batter thickens. |
| 2 | Heat the pan. Warm a nonstick skillet over medium-low. Lightly butter it. Too hot and the cakes burn before they cook through. |
| 3 | Cook. Pour about 1/4 cup batter per pancake. Cook 2 to 3 minutes until the edges set and bubbles show. Flip once. Cook 1 to 2 minutes more until gold, like the photo. |
| 4 | Repeat. Keep cooked cakes on a plate. Butter the pan between batches. You should get 8 pancakes. |
| 5 | Stack and serve. Stack, add a pat of butter, and drizzle sugar-free syrup so it drips down the sides, like the photo. Two pancakes is one serving. |

- Rest the batter. Fresh whey batter is thin and spreads too far.
- Medium-low heat. High heat browns the outside and leaves a wet center.
