Ingredients (Serves 8)
- 2 lbs (900g) ground beef (or mix with ground pork)
- 2 large eggs
- ⅓ cup (35g) almond flour or crushed pork rinds
- ½ cup (50g) grated Parmesan cheese
- 1 small onion, finely diced
- 3 cloves garlic, minced
- 2 tsp Worcestershire sauce (sugar-free)
- 1 tsp Italian seasoning
- Salt & black pepper to taste
Glaze:
- ⅓ cup low-sugar BBQ sauce or sugar-free ketchup
- 2 tbsp allulose or powdered monk fruit
- 1 tbsp mustard or Worcestershire sauce
Instructions
- Preheat oven to 375°F (190°C). Line a baking sheet or loaf pan with parchment.
- Mix ground beef, eggs, almond flour, Parmesan, onion, garlic, Worcestershire, Italian seasoning, salt, and pepper until just combined.
- Shape into a loaf on the baking sheet. Bake 45 minutes.
- Mix glaze ingredients. Brush over the meatloaf and bake another 15–20 minutes until internal temperature reaches 160°F (71°C).
- Let rest 10 minutes before slicing.
