Ingredients (Serves 8)

  • 2 lbs (900g) ground beef (or mix with ground pork)
  • 2 large eggs
  • ⅓ cup (35g) almond flour or crushed pork rinds
  • ½ cup (50g) grated Parmesan cheese
  • 1 small onion, finely diced
  • 3 cloves garlic, minced
  • 2 tsp Worcestershire sauce (sugar-free)
  • 1 tsp Italian seasoning
  • Salt & black pepper to taste

Glaze:

  • ⅓ cup low-sugar BBQ sauce or sugar-free ketchup
  • 2 tbsp allulose or powdered monk fruit
  • 1 tbsp mustard or Worcestershire sauce

Instructions

  1. Preheat oven to 375°F (190°C). Line a baking sheet or loaf pan with parchment.
  2. Mix ground beef, eggs, almond flour, Parmesan, onion, garlic, Worcestershire, Italian seasoning, salt, and pepper until just combined.
  3. Shape into a loaf on the baking sheet. Bake 45 minutes.
  4. Mix glaze ingredients. Brush over the meatloaf and bake another 15–20 minutes until internal temperature reaches 160°F (71°C).
  5. Let rest 10 minutes before slicing.
