This is a classic glazed loaf, not mini patties. Lean beef, a little celery and onion (the green flecks in the photo), and almond flour instead of breadcrumbs. The glaze goes on late so it turns mahogany and sticky, like the plate in the photo. No sugar ketchup. Seventy-five minutes.

  • 2 lb (900g) lean ground beef (93%)
  • 2 large eggs
  • 1/2 cup almond flour
  • 1/2 cup finely diced onion
  • 1/3 cup finely diced celery
  • 2 garlic cloves, minced
  • 2 Tbsp sugar-free ketchup
  • 1 Tbsp Worcestershire (check label) or coconut aminos
  • 1 tsp salt + 1/2 tsp black pepper
  • 1 tsp Italian seasoning or dried parsley

Glaze

  • 1/3 cup sugar-free ketchup
  • 1 Tbsp apple cider vinegar
  • 1 tsp mustard
  • 1/2 tsp smoked paprika
  • 1/2 tsp monk fruit or allulose, optional, for shine

Swaps

  • Beef + turkey: 1 lb each. A little leaner, still high protein.
  • Pork rind crumbs: Use 1/2 cup instead of almond flour.
  • No celery: Use green bell pepper for the flecks in the photo.
  • Free-form: Shape on a sheet instead of a loaf pan. Bake 5 minutes less.
