High-Protein Mug Bread

Cottage cheese bread in a mug – mix, microwave, slice, and butter. Five minutes.

This is a single serving of bread you make in the mug you eat from. Cottage cheese, an egg, almond flour, and a scoop of unflavored protein bake into a tall, tender crumb. The top browns. The slice takes butter like toast.

Hands-on time is about 2 minutes. The microwave does the rest.

Why you’ll love this mug bread

  • 28g protein in one mug – breakfast that holds you
  • Only 4g net carbs – no wheat flour
  • About 5 minutes, one mug, one fork
  • Slices like bread and takes butter
  • Cottage cheese keeps the crumb moist
  • Savory or lightly sweet, your call

Health notes

  • High protein: Cottage cheese, egg, and a scoop of whey or casein.
  • Low carb: Almond flour instead of wheat.
  • No yeast: Baking powder gives the rise in the microwave.
  • One serving: You mix what you eat. No leftover loaf.

Key element – stop at 90 seconds, then check

Microwaves run hot. At 90 seconds the top should look set and springy. If the center is still wet, add 10 to 15 seconds. Overcook it and the crumb turns rubber. A 12 to 14 oz mug gives it room to dome like the photo.

Ingredients

Instructions

  1. Prep the mug. Use a 12 to 14 oz microwave-safe mug. Brush the inside with oil or melted butter so the loaf releases. Drain the cottage cheese if it looks watery.
  2. Mash the wet mix. In the mug, mash cottage cheese and egg with a fork until mostly smooth. Small curds are fine. Big lumps make wet pockets.
  3. Stir the dry in. Add almond flour, protein powder, baking powder, and salt. Stir just until no dry streaks remain. The batter should be thick, not pourable. Tap the mug so the top is even.
  4. Microwave. Cook on high 90 seconds. The top should look set and spring back. If the center is wet, add 10 to 15 seconds. Do not go past about 2 minutes.
  5. Rest and slice. Let it sit 1 minute. Run a knife around the edge and tip it out, or eat it from the mug. Slice and add butter while it is warm.

Notes & Tips

  1. A bigger mug is safer. A small mug overflows and cooks uneven.
  2. Drain cottage cheese. Extra whey makes a soggy bottom.
  3. Unflavored whey or casein both work. Casein makes a slightly softer crumb.
  4. If the top browns too fast, stop at 80 seconds and finish in 10-second bursts.
  5. For a toast-like crust, pop the slice in a dry skillet 30 seconds per side.

Variations & serving ideas

  • No cottage cheese: Use 1/3 cup plain Greek yogurt. Crumb is a little tangier.
  • No protein powder: Add 1 extra Tbsp almond flour. Protein lands around 16g.
  • Egg white only: Use 3 Tbsp liquid egg white plus 1 tsp oil so it does not dry out.
  • Oven or air fryer: 350 F for 10 to 12 minutes in an oven-safe mug or ramekin.
  • Cheddar herb: Fold in 1 Tbsp shredded cheddar and a pinch of garlic and parsley.
  • Cinnamon toast: Use vanilla protein, add 1/2 tsp cinnamon, and finish with a thin swipe of butter.
  • Everything bagel: Sprinkle everything-bagel seasoning on top before you microwave.
  • Air-fryer mug: 350 F for 10 to 12 minutes in an oven-safe mug. The top browns more like the photo.

Storage

  • Best eaten: Right away (Warm crumb and melting butter)
  • Refrigerator: Up to 2 days (Wrap; reheat 20 seconds or toast in a skillet)
  • Freezer: Up to 1 month (Wrap the loaf; thaw and toast)

Frequently asked questions

Is this mug bread keto-friendly?

Yes. About 4g net carbs with almond flour and no wheat. Check your protein powder for hidden carbs.

Why is my bread rubbery?

It cooked too long or the mug was too small. Stop at 90 seconds and add time only if the center is wet.

Can I skip the protein powder?

Yes. Add 1 extra Tbsp almond flour. Protein lands around 16g instead of 28g.

Do I have to use cottage cheese?

Greek yogurt works. Cottage cheese is what gives the tall, moist crumb in the photo.

Can I bake it instead?

Yes. 350 F for 10 to 12 minutes in an oven-safe mug or ramekin. The top browns more than the microwave.

Why did it overflow?

The mug was too small or you overfilled. Use 12 to 14 oz and fill no more than halfway.
