High-Protein Fluffy Keto Pancakes
High-Protein Fluffy Keto Pancakes
Tall golden pancakes with a soft crumb — low carb, sugar-free, and ready in 30 minutes
These high-protein fluffy keto pancakes use almond flour, cream cheese, and vanilla protein powder. The batter rests a few minutes so the cakes rise instead of spreading thin. Each serving of 2–3 pancakes has 25 g of protein and 5 g net carbs.
Low carb, sugar-free, and stacked like the photo.
Why you’ll love these pancakes
- 25g protein per serving
- Only 5g net carbs
- No wheat flour
- Ready in about 30 minutes
- Soft, tall stacks
- Sugar-free batter
Health notes
- High protein: Eggs and vanilla protein powder carry the macros.
- Low carb: Almond flour replaces wheat flour.
- Sugar-free: Powdered keto sweetener only.
- Fluffy lift: Baking powder plus a short rest.
Key element — low heat and don’t flip early
Almond flour browns fast. Medium-low heat and bubbles around the edge mean it is time to flip, not the first tiny bubble.
Ingredients
Batter (about 8 pancakes / 3 servings)
- 4 oz cream cheese, softened
- 4 large eggs
- 1 scoop vanilla protein powder
- ½ cup almond flour
- 2 Tbsp powdered sugar-free sweetener
- 1 tsp baking powder
- 1 tsp vanilla extract
- Pinch of salt
- 2–3 Tbsp unsweetened almond milk, if needed
- Butter or avocado oil, for the pan
To serve
- Butter
- Sugar-free syrup
- Berries (optional, extras not in macros)
Swaps
- No cream cheese: Use ⅓ cup ricotta.
- No protein powder: Add 2 extra Tbsp almond flour (protein drops).
- Coconut flour: Use 3 Tbsp coconut flour instead of ½ cup almond flour and add 1 extra egg.
- Dairy-free: Use dairy-free cream cheese.
Instructions
| 1 | Blend the batter. Blend cream cheese, eggs, protein powder, almond flour, sweetener, baking powder, vanilla, and salt until smooth. Rest 5 minutes. Thin with almond milk only if it is too thick to scoop. |
| 2 | Heat the pan. Warm a nonstick skillet over medium-low. Add a little butter. |
| 3 | Cook. Scoop ¼-cup portions. Cook 2–3 minutes until edges look set and bubbles appear. Flip and cook 1–2 minutes more until golden. |
| 4 | Stack. Keep finished pancakes on a plate under foil. Serve 2–3 per person with butter and sugar-free syrup. |
Pro tips
- A blender makes the cream cheese disappear.
- Don’t turn the heat up or the outside burns before the center sets.
- Wipe the pan between batches if brown bits collect.
- Smaller pancakes are easier to flip than diner-size ones.
- Macros do not include syrup or berries.
