- 1 medium head cauliflower (about 1 1/2 lb / 680g), cut into bite-size florets
- 2 large eggs
- 1 cup (90g) finely grated Parmesan
- 1 scoop (30g) unflavored or garlic whey (or extra 1/3 cup Parmesan)
- 1 tsp garlic powder
- 1/2 tsp paprika
- 1/2 tsp salt + 1/4 tsp black pepper
- Spray oil
Dip
- 1/3 cup Greek yogurt
- 1 Tbsp mayonnaise
- 1 tsp hot sauce or sugar-free buffalo
- Pinch of paprika and salt
- Chopped parsley, to finish
Swaps
- Air fryer: 390 F for 14 to 16 minutes, shake once.
- No whey: Use 1 1/3 cups Parmesan total. Protein drops a little.
- Ranch dip: Mix yogurt with 1 tsp ranch seasoning instead of hot sauce.
- Frozen cauliflower: Thaw and dry extra hard. Frozen holds more water.
Instructions
| 1 | Heat and dry. Heat oven to 425 F (220 C). Line a sheet with parchment. Cut cauliflower into even florets. Pat them very dry with a towel. |
| 2 | Coat. Beat the eggs in a bowl. In a second bowl mix Parmesan, whey, garlic powder, paprika, salt, and pepper. Dip florets in egg, then toss in the cheese mix until they look dusty-gold. |

| 4 | Bake. Bake 28 to 32 minutes, flip once at minute 18, until the edges are deep gold and crisp, like the photo. |
