- 2 lbs (900g) boneless, skinless chicken thighs or breasts, cut into bite-sized pieces
- 12–16 oz (340–450g) mushrooms, sliced
- 8–10 oz (225–280g) fresh spinach (or 1 package frozen, thawed and squeezed dry)
- 8 oz (225g) full-fat cream cheese, softened
- ½ cup (120ml) heavy cream or full-fat Greek yogurt
- 1½ cups (150g) shredded mozzarella or Italian blend cheese (divided)
- ½ cup (50g) grated Parmesan cheese
- 3–4 cloves garlic, minced
- 1 tsp Italian seasoning
- ½ tsp onion powder
- Salt & black pepper to taste
- 2 tbsp olive oil or butter (for cooking)

Instructions
- Preheat oven to 375°F (190°C). Lightly grease a 9×13 glass baking dish.
- Heat oil or butter in a large skillet over medium-high heat. Season chicken with salt, pepper, and Italian seasoning. Cook until lightly browned (5–7 minutes). Remove and set aside.
- In the same skillet, sauté mushrooms until golden (4–5 minutes). Add garlic and cook 30 seconds until fragrant.
