  • 2 lbs (900g) boneless, skinless chicken thighs or breasts, cut into bite-sized pieces
  • 12–16 oz (340–450g) mushrooms, sliced
  • 8–10 oz (225–280g) fresh spinach (or 1 package frozen, thawed and squeezed dry)
  • 8 oz (225g) full-fat cream cheese, softened
  • ½ cup (120ml) heavy cream or full-fat Greek yogurt
  • 1½ cups (150g) shredded mozzarella or Italian blend cheese (divided)

  • 3–4 cloves garlic, minced
  • 1 tsp Italian seasoning
  • ½ tsp onion powder

Instructions

  1. Preheat oven to 375°F (190°C). Lightly grease a 9×13 glass baking dish.
