Chocolate Peanut Butter Balls

No-bake candy with a creamy peanut butter center and a thin dark chocolate shell

These are Buckeye energy without the sugar crash. A soft peanut butter filling (sweetened sugar-free, with optional protein powder) gets rolled, chilled, then dipped in melted sugar-free chocolate. One bite: snap, then cream.

About 45 minutes including chill time. Keep a tin in the fridge for dessert, post-workout, or late-night chocolate math that still fits keto.

Chill: 30 min

Protein: 6-7g

Why you’ll love them

  • 6 to 7g protein per ball – dessert that still works
  • Only 3g net carbs – keto and low-carb friendly
  • No oven – mix, chill, dip
  • Sugar-free chocolate shell with a creamy peanut center
  • Freezer-friendly for grab-and-go treats
  • Easy to skip protein powder if you want them softer

Health notes

  • High protein: Peanut butter plus optional protein powder.
  • Low carb: Powdered erythritol or monk fruit, no powdered sugar.
  • Sugar-free coat: Dark sugar-free chocolate keeps the snap without the spike.
  • Portion easy: One ball is one serving unit – simple to track.

Key element – chill before you dip

Warm filling slides off the fork and into the chocolate. Chill the rolled balls at least 20 to 30 minutes (freezer 10 minutes works) so they stay round and the shell sets thin and smooth.

Ingredients

Instructions

  1. Make the filling. Beat peanut butter, softened butter, powdered sweetener, vanilla, salt, and protein powder (if using) until smooth. It should scoop like cookie dough. If it is sticky, mix in 1 Tbsp almond flour.
  2. Roll. Scoop about 1 Tbsp portions and roll into 16 even balls. Set them on a parchment-lined plate.
  3. Chill. Refrigerate 25 to 30 minutes, or freeze 10 minutes, until firm to the touch. Do not skip this or the dip will be messy.
  4. Melt the chocolate. Microwave chocolate and coconut oil in 20-second bursts, stirring between each, until smooth. Or melt over a gentle double boiler. Do not overheat.
  5. Dip and set. Spear a ball with a fork, dip, tap off extra chocolate, and return to parchment. Finish with flaky salt if you like. Chill 10 minutes until the shell is set. Store cold.

Notes & Tips

  1. Use powdered sweetener, not granular – grit ruins the filling.
  2. Natural peanut butter should be well stirred so oil is mixed in, not sitting on top.
  3. Work in small batches: keep extra balls in the fridge while you dip.
  4. A fork plus a toothpick to nudge the ball off gives a cleaner coat than a spoon.
  5. If the chocolate thickens, warm it 10 seconds – do not add water.
  6. Protein: 6-7g

Variations & serving ideas

  • No protein powder: Skip it – still great, about 4 to 5g protein per ball.
  • Nut-free: Use sunflower seed butter (it may tint green in the fridge; harmless).
  • Almond butter: Works 1:1 if you like a milder filling.
  • Dairy-free: Coconut oil instead of butter; dairy-free chocolate.
  • Buckeye style: Dip only 3/4 of each ball so a peanut butter “eye” shows at the top.
  • Crunchy center: Fold 2 Tbsp chopped roasted peanuts into the filling before rolling.
  • Mocha coat: Stir 1/2 tsp instant espresso into the melted chocolate.
  • Mini bites: Roll 24 smaller balls and dip as usual – handy for a dessert tray.

Storage

  • Refrigerator: Up to 10 days (Airtight container, parchment between layers)
  • Freezer: Up to 2 months (Thaw 5 to 10 minutes before eating)
  • Room temp: A few hours (Fine for a party; they soften if the room is warm)

Frequently asked questions

Are these keto-friendly?

Yes. About 3g net carbs per ball with powdered sugar-free sweetener and sugar-free chocolate. Check your peanut butter label for added sugar.

Can I skip the protein powder?

Yes. The flavor stays excellent. Protein lands around 4 to 5g per ball instead of 6 to 7g. You may need a little less almond flour.

Why is my filling too soft to roll?

The peanut butter was oily or the butter was too warm. Chill the bowl 10 minutes, or mix in 1 Tbsp almond flour or extra protein powder until it scoops cleanly.

Can I use regular chocolate chips?

Yes for a non-keto version, but carbs jump. For 3g net carbs, stick with sugar-free dark chocolate.

How do I get a thin, smooth coat?

Add a little coconut oil to the melt, keep the chocolate fluid, chill the balls first, and tap the fork well so extra chocolate drips off.

Do they need to stay in the fridge?

Yes for the best texture. They soften at room temperature. For a party, set out a small plate and keep the rest cold.
