Chocolate Cake Layers:

  • 1½ cups (150g) almond flour
  • ⅓ cup (35g) chocolate whey protein powder
  • ⅓ cup (30g) unsweetened cocoa powder
  • ⅔ cup (130g) allulose or powdered monk fruit
  • 3 large eggs
  • ⅓ cup (80g) melted butter or coconut oil
  • ½ cup (120g) full-fat Greek yogurt or sour cream
  • 1 tsp vanilla extract
  • 1 tsp baking powder
  • ¼ tsp salt

Cheesecake Layer:

  • 8 oz (225g) full-fat cream cheese, softened
  • 1 large egg
  • ¼ cup (50g) allulose or powdered monk fruit
  • 1 tsp vanilla extract
  • 2 tbsp heavy cream

Topping:

  • Sugar-free chocolate sprinkles (or shaved sugar-free chocolate)

Instructions

  1. Preheat oven to 325°F (165°C). Grease and line one 8–9 inch round pan (or square pan) with parchment.
  2. Cheesecake Layer: Beat cream cheese until smooth. Add egg, sweetener, vanilla, and heavy cream. Mix until creamy. Pour into prepared pan and bake 18–22 minutes until just set. Cool completely.
  3. Chocolate Cake: In a bowl, whisk almond flour, protein powder, cocoa, sweetener, baking powder, and salt. Add eggs, melted butter, Greek yogurt, and vanilla. Mix until smooth.
  4. Pour half the chocolate batter into a greased 8–9 inch pan. Place the cooled cheesecake layer on top (trim edges if needed). Cover with remaining chocolate batter.
  5. Bake 35–45 minutes until a toothpick comes out with a few moist crumbs. Cool completely in the pan.
  6. Run a knife around the edges and transfer to a plate. Top generously with sugar-free chocolate sprinkles.
