- 2 lbs (900g) ground beef (80/20 or lean)
- 4–5 medium zucchinis, sliced into thin rounds
- 2 cups (200g) shredded mozzarella or Italian blend cheese (divided)
- ½ cup (50g) grated Parmesan cheese
- 1 cup (240ml) marinara or sugar-free tomato sauce
- 1 small onion, diced
- 3–4 cloves garlic, minced
- 2 tsp Italian seasoning
- 1 tsp salt (or to taste)
- ½ tsp black pepper
- 2 tbsp olive oil
- Fresh parsley for garnish
Instructions
- Preheat oven to 375°F (190°C). Lightly grease a large baking dish.
- Heat olive oil in a large skillet over medium-high heat. Add onion and cook 2–3 minutes. Add garlic and ground beef; cook until browned, breaking it up (6–8 minutes). Drain excess fat if needed.
- Stir in tomato sauce, Italian seasoning, salt, and pepper. Simmer 3–5 minutes.
- In the baking dish, layer half the zucchini slices. Top with half the meat sauce, then half the mozzarella and Parmesan.
- Repeat layers, ending with remaining cheese on top.
- Bake 25–30 minutes until zucchini is tender and cheese is bubbly and golden. Broil for the last 2 minutes if desired for extra browning.
