  • 2 lbs (900g) ground beef (80/20 or lean)
  • 4–5 medium zucchinis, sliced into thin rounds
  • 2 cups (200g) shredded mozzarella or Italian blend cheese (divided)
  • ½ cup (50g) grated Parmesan cheese
  • 1 cup (240ml) marinara or sugar-free tomato sauce
  • 1 small onion, diced
  • 3–4 cloves garlic, minced
  • 2 tsp Italian seasoning
  • 1 tsp salt (or to taste)
  • ½ tsp black pepper
  • 2 tbsp olive oil
  • Fresh parsley for garnish

Instructions

  1. Preheat oven to 375°F (190°C). Lightly grease a large baking dish.
  2. Heat olive oil in a large skillet over medium-high heat. Add onion and cook 2–3 minutes. Add garlic and ground beef; cook until browned, breaking it up (6–8 minutes). Drain excess fat if needed.
  3. Stir in tomato sauce, Italian seasoning, salt, and pepper. Simmer 3–5 minutes.
  4. In the baking dish, layer half the zucchini slices. Top with half the meat sauce, then half the mozzarella and Parmesan.
  5. Repeat layers, ending with remaining cheese on top.
  6. Bake 25–30 minutes until zucchini is tender and cheese is bubbly and golden. Broil for the last 2 minutes if desired for extra browning.
  7. Let rest 5–10 minutes. Garnish with fresh parsley and serve.
