Ingredients (Makes 12 muffins)
- 10 large eggs
- 1 cup (100g) shredded cheddar or mozzarella cheese
- ½ cup (120g) cottage cheese or Greek yogurt
- ¼ cup (25g) grated Parmesan
- ½ tsp garlic powder
- ½ tsp onion powder
- Salt & black pepper to taste
- 2–3 tbsp chopped fresh chives or green onions
Instructions
- Preheat oven to 375°F (190°C). Grease a 12-cup muffin tin.
- Whisk eggs, cottage cheese/Greek yogurt, garlic powder, onion powder, salt, and pepper until smooth.
- Stir in shredded cheddar, Parmesan, and chives.
