Ingredients (Makes 12 muffins)

  • 10 large eggs
  • 1 cup (100g) shredded cheddar or mozzarella cheese
  • ½ cup (120g) cottage cheese or Greek yogurt
  • ¼ cup (25g) grated Parmesan
  • ½ tsp garlic powder
  • ½ tsp onion powder
  • Salt & black pepper to taste
  • 2–3 tbsp chopped fresh chives or green onions

Instructions

  1. Preheat oven to 375°F (190°C). Grease a 12-cup muffin tin.
  2. Whisk eggs, cottage cheese/Greek yogurt, garlic powder, onion powder, salt, and pepper until smooth.
  3. Stir in shredded cheddar, Parmesan, and chives.
  4. Pour mixture evenly into muffin cups.
  5. Bake 20–25 minutes until puffed and golden on top.
  6. Cool slightly before removing from tin.
