Ingredients (Makes 20–24 bites)
- 4 cups (about 400g) broccoli florets, finely chopped or pulsed in food processor
- 2 large eggs
- 1 cup (100g) shredded mozzarella or cheddar cheese
- ½ cup (50g) grated Parmesan cheese
- ½ cup (50g) almond flour or crushed pork rinds
- 1 scoop (25g) unflavored whey protein powder (optional, boosts protein)
- 2 cloves garlic, minced
- 1 tsp Italian seasoning
- ½ tsp onion powder
- Salt & black pepper to taste
- Extra Parmesan or almond flour for coating (optional)
Instructions
- Preheat oven to 400°F (200°C) or air fryer to 380°F (190°C). Line a baking sheet with parchment paper.
- Steam or microwave broccoli until just tender (2–3 minutes). Drain well and pat dry. Chop finely or pulse in a food processor (do not turn into mush).
- In a large bowl, mix chopped broccoli, eggs, mozzarella, Parmesan, almond flour/pork rinds, protein powder (if using), garlic, Italian seasoning, onion powder, salt & pepper until well combined.
- Scoop about 1–2 tablespoons of mixture and roll into balls. Roll in extra Parmesan or almond flour for a crispier coating if desired.
- Place on the baking sheet. Lightly spray with oil.
- Bake 18–22 minutes (or air fry 12–15 minutes) until golden and crispy, flipping halfway.
- Let cool slightly (cheese will be very hot). Serve warm with ranch, sour cream, or sugar-free marinara.
