Ingredients (Makes 20–24 bites)

  • 4 cups (about 400g) broccoli florets, finely chopped or pulsed in food processor
  • 2 large eggs
  • 1 cup (100g) shredded mozzarella or cheddar cheese
  • ½ cup (50g) grated Parmesan cheese
  • ½ cup (50g) almond flour or crushed pork rinds
  • 1 scoop (25g) unflavored whey protein powder (optional, boosts protein)
  • 2 cloves garlic, minced
  • 1 tsp Italian seasoning
  • ½ tsp onion powder
  • Salt & black pepper to taste
  • Extra Parmesan or almond flour for coating (optional)

Instructions

  1. Preheat oven to 400°F (200°C) or air fryer to 380°F (190°C). Line a baking sheet with parchment paper.
  2. Steam or microwave broccoli until just tender (2–3 minutes). Drain well and pat dry. Chop finely or pulse in a food processor (do not turn into mush).
  3. In a large bowl, mix chopped broccoli, eggs, mozzarella, Parmesan, almond flour/pork rinds, protein powder (if using), garlic, Italian seasoning, onion powder, salt & pepper until well combined.
  4. Scoop about 1–2 tablespoons of mixture and roll into balls. Roll in extra Parmesan or almond flour for a crispier coating if desired.
  5. Place on the baking sheet. Lightly spray with oil.
  6. Bake 18–22 minutes (or air fry 12–15 minutes) until golden and crispy, flipping halfway.
