Ingredients (Serves 6)
- 2 lbs (900g) ground beef
- 3–4 bell peppers (red, green, yellow), chopped
- 1 medium onion, diced
- 3–4 cloves garlic, minced
- 1 cup (240ml) sugar-free tomato sauce or salsa
- 2 cups (200g) shredded Mexican blend or cheddar cheese (divided)
- 2 tsp chili powder
- 1 tsp cumin
- 1 tsp paprika
- ½ tsp oregano
- Salt & black pepper to taste
- 2 tbsp olive oil or avocado oil
- Optional: jalapeños or red pepper flakes for heat, fresh cilantro for garnish
Instructions
- Preheat oven to 375°F (190°C). Lightly grease a 9×13 glass baking dish.
- Heat oil in a large skillet over medium-high heat. Add onion and cook 2–3 minutes. Add garlic and ground beef; cook until browned, breaking it up (6–8 minutes). Drain excess fat if needed.
- Stir in chopped bell peppers, tomato sauce/salsa, chili powder, cumin, paprika, oregano, salt, and pepper. Cook 4–5 minutes until peppers start to soften.
- Transfer mixture to the baking dish. Top evenly with 1½ cups shredded cheese.
- Bake 15–20 minutes until cheese is melted and bubbly. Broil for the last 2 minutes for extra golden browning if desired.
- Let rest 5 minutes. Garnish with fresh cilantro and serve.
