  • 8–10 low-carb tortillas or large cheese slices (for cheese shell version)
  • 1½ cups (150g) shredded cheddar or mozzarella cheese
  • 1 green bell pepper, finely diced
  • 1 small onion, finely diced (optional)
  • 2–3 cloves garlic, minced
  • 1 tbsp ketchup (sugar-free) + 1 tsp mustard
  • 1 tsp Worcestershire sauce (optional)
  • 1 tsp onion powder
  • 1 tsp smoked paprika
  • Salt & black pepper to taste
  • 2 tbsp olive oil or butter (for cooking)
  • Fresh parsley for garnish
  • Sugar-free ketchup for dipping

Instructions

  1. Heat oil in a large skillet over medium heat. Add onion (if using) and green pepper; cook 3–4 minutes until softened. Add garlic and cook 30 seconds.
  2. Add ground beef, breaking it up. Cook until browned. Drain excess fat.
  3. Stir in onion powder, paprika, salt, pepper, sugar-free ketchup, mustard, and Worcestershire. Cook 2 more minutes. Remove from heat and stir in ½ cup shredded cheese until melted.
  4. Assembly: If using low-carb tortillas, warm slightly. Place filling down the center of each wrap, top with extra cheese, and roll tightly. Secure with toothpicks if needed. (For cheese shell: melt cheese circles in a skillet, add filling, and roll quickly.)
  5. Place rolls seam-side down on a baking sheet. Brush lightly with oil or melted butter.
