- 1 1/2 lb (680g) lean ground beef (93%)
- 1/2 small onion, diced
- 2 celery stalks, sliced
- 3 garlic cloves, minced
- 5 cups chopped green cabbage (about 1/2 medium head)
- 1 can (14.5 oz) diced tomatoes
- 2 Tbsp tomato paste
- 5 cups beef broth
- 1 tsp paprika
- 1 tsp Italian seasoning
- 1 tsp salt + 1/2 tsp black pepper
- 1 bay leaf
Swaps
- Turkey: Same weight. Add 1 tsp oil so it browns.
- Stew beef: 1 1/2 lb cubes. Simmer 60 minutes before the cabbage.
- No onion: Skip it. Celery still gives the bite.
- Spicy: Add 1/2 tsp red pepper flakes with the paprika.
Instructions
