Ingredients (Makes 12–16 bites)
- 2 cups (200g) finely chopped broccoli (steamed and drained well)
- 1 cup (100g) shredded cheddar cheese
- ½ cup (50g) grated Parmesan cheese
- 2 large eggs
- ⅓ cup (35g) almond flour
- 2 tbsp cream cheese, softened
- 1 tsp garlic powder
- ½ tsp onion powder
- Salt & pepper to taste
- Optional: low-carb breadcrumbs or crushed pork rinds for extra crunch
Instructions
- Preheat oven to 400°F (200°C). Line a baking sheet with parchment paper.
- Mix all ingredients in a bowl until well combined (the mixture should hold together).
- Scoop and roll into balls (about 1.5–2 tablespoons each). Place on the baking sheet.
- Bake 18–24 minutes until golden and crispy on the outside.
- Let cool slightly before serving (cheese will be very hot).
