Ingredients (Makes 12–16 bites)

  • 2 cups (200g) finely chopped broccoli (steamed and drained well)
  • 1 cup (100g) shredded cheddar cheese
  • ½ cup (50g) grated Parmesan cheese
  • 2 large eggs
  • ⅓ cup (35g) almond flour
  • 2 tbsp cream cheese, softened
  • 1 tsp garlic powder
  • ½ tsp onion powder
  • Salt & pepper to taste
  • Optional: low-carb breadcrumbs or crushed pork rinds for extra crunch

Instructions

  1. Preheat oven to 400°F (200°C). Line a baking sheet with parchment paper.
  2. Mix all ingredients in a bowl until well combined (the mixture should hold together).
  3. Scoop and roll into balls (about 1.5–2 tablespoons each). Place on the baking sheet.
  4. Bake 18–24 minutes until golden and crispy on the outside.
  5. Let cool slightly before serving (cheese will be very hot).
