Ingredients (Makes 6 bagels)
- 1 cup (100g) almond flour
- ½ cup (50g) vanilla whey protein powder
- 2 tsp baking powder
- ¼ tsp salt
- 1 cup (225g) full-fat Greek yogurt (or blended cottage cheese)
- 1 large egg
- ½ cup (75g) fresh or frozen blueberries
- Optional: 1–2 tbsp allulose or monk fruit sweetener + ½ tsp vanilla extract
For Topping (optional): Egg wash + everything bagel seasoning or a light sprinkle of sweetener
Instructions
- Preheat oven to 350°F (175°C). Line a baking sheet with parchment paper or use a silicone donut/bagel mold.
- In a large bowl, whisk together almond flour, protein powder, baking powder, and salt.
- Add Greek yogurt, egg, and sweetener/vanilla (if using). Mix until a thick dough forms.
- Gently fold in the blueberries (if frozen, no need to thaw).
- Divide dough into 6 portions. Shape into bagels by forming rings (or use a donut pan). Place on the prepared sheet.
