High-Protein Blueberry Mug Cake
Blueberry Protein Mug Cake
One mug, a gold crumb, burst berries on top – 90 seconds in the microwave
This is a single mug cake, not a loaf. Almond flour, vanilla whey, and an egg make a gold crumb. Blueberries go in the batter and a few sit on top so it looks like the photo. Eat it in the mug with a spoon.
Five minutes start to finish. Stop the microwave a few seconds early. Protein cakes go rubbery if you wait for them to look fully dry.
Why you’ll love this mug
- 32g protein in one mug – breakfast or dessert
- Only 10g net carbs – almond flour, a handful of berries
- About 5 minutes, one mug, no oven
- Gold crumb and purple bursts, like the photo
- No mixer, no pan
- Better slightly underdone than dry
Health notes
- High protein: A full scoop of whey plus an egg.
- Low carb: Almond flour and a measured 1/4 cup blueberries.
- One mug: One serving.
- Eat now: It dries as it sits.
Key element – stop at 80 to 90 seconds while the center still looks soft
If you wait until the top is fully dry, you cooked a rubber puck. At 80 to 90 seconds the edges should be set and the middle should still look a little wet. It finishes in the mug while you add the extra berries on top.
Ingredients
One mug
- 1 scoop (30g) vanilla whey protein
- 3 Tbsp (21g) fine blanched almond flour
- 1/2 tsp baking powder
- Pinch of salt
- 1 large egg
- 2 Tbsp unsweetened almond milk
- 1 tsp melted butter (or coconut oil)
- 1/2 tsp vanilla extract
- 1 to 2 tsp powdered erythritol if your whey is unsweetened
- 1/4 cup fresh or frozen blueberries, plus extra for the top
Swaps
- Casein: Makes a moister crumb than whey. Same scoop.
- No whey: Add 1 extra Tbsp almond flour and 2 Tbsp Greek yogurt. Protein drops.
- Raspberry: Same 1/4 cup. Color is red, not purple.
- Oven: 350 F for 12 to 14 minutes in an oven-safe mug.
Instructions
| 1 | Grease the mug. Lightly butter a 10 to 12 oz microwave-safe mug. A tight mug overflows. A wide mug, like the photo, is better. |
| 2 | Mix dry, then wet. In the mug, stir whey, almond flour, baking powder, and salt. Add egg, milk, melted butter, vanilla, and sweetener. Stir until no dry pockets remain. Do not beat. |
| 3 | Fold the berries. Fold most of the blueberries into the batter. Press a few on top so they burst as it cooks. |
| 4 | Microwave. Cook on high 80 to 90 seconds. The edges should be set and the center still a little soft. If your microwave is over 1000 watts, start at 70 seconds. |
| 5 | Top and eat. Rest 1 minute. Pile extra blueberries on top, like the photo. Eat in the mug with a spoon. |
Pro tips
- Frozen berries go in straight from the freezer. Do not thaw or the batter turns purple soup.
- A pinch of salt makes the whey taste like cake, not shake.
- If the top is wet after 90 seconds, add 10 seconds. Do not start over at 2 minutes.
- Leave at least 1 inch of space at the rim. The cake rises, then settles.
- A 1-minute rest is not optional. The center sets as it sits.
