Ingredients (Makes 12–15 bites)
- 8 oz (225g) full-fat cream cheese, softened
- ¾ cup (170g) full-fat Greek yogurt
- ⅓ cup (35g) vanilla whey protein powder
- ⅓ cup (65g) allulose or powdered monk fruit sweetener (adjust to taste)
- 1 tsp vanilla extract
- Zest of 1 lemon (optional, for brightness)
- 1 cup (150g) fresh or frozen blueberries (divided)
- 2–3 tbsp almond flour or coconut flour (if needed for firmness)
- Pinch of salt
- Optional: Add an extra ½ scoop of whey (adjust with more yogurt if needed).
Instructions
- In a bowl, beat softened cream cheese until smooth. Add Greek yogurt, protein powder, sweetener, vanilla, lemon zest (if using), and salt. Mix until creamy.
- In a small bowl, microwave or mash ½ cup blueberries until juicy. Gently swirl the blueberry puree into the cheesecake mixture for a marbled look (do not fully mix).
- If the mixture is too soft, stir in 2–3 tbsp almond or coconut flour. Chill for 15–30 minutes.
