High-Protein Beef Cheese Quesadilla Stack

High-Protein Beef Cheese Quesadilla Stack
Jump to Recipe

Crisp low-carb tortillas, beef, melted cheese – 30 minutes, one skillet

This is a stack of quesadilla wedges, not one floppy taco. Lean beef browns with taco seasoning. Low-carb tortillas get a heavy cheese-and-beef fill, then toast until the outside is gold and the cheese stretches, like the plate in the photo. Cut into wedges and stack them high.

Thirty minutes. Four servings. Two wedges each.

Why you’ll love this stack

  • 35g protein per serving – two wedges that fill you
  • Only 6g net carbs – low-carb tortillas, not flour
  • About 30 minutes, one skillet
  • Gold toast, beef, stretchy cheese, like the photo
  • No rice, no beans, no takeout wait
  • The stack looks like a diner plate

Health notes

  • High protein: A pound of beef plus mozzarella.
  • Low carb: Use low-carb tortillas (about 4g net each). Regular flour tortillas blow the 6g.
  • Four servings: 2 quesadillas, 8 wedges, 2 per plate.
  • Macros are per serving, not the whole stack.

Key element – cheese on both sides of the beef, then medium heat

Cheese is the glue. A layer on the bottom tortilla, beef, then more cheese on top. Medium heat toasts the outside gold without burning before the cheese melts. High heat gives you a scorched shell and cold filling.

Ingredients

Instructions

  1. Brown the beef. Heat a skillet over medium-high. Cook the beef 6 to 8 minutes, breaking it into small crumbles, until browned. Stir in taco seasoning, water, salt, and pepper. Cook 1 minute more. Drain extra fat.
  2. Build. Wipe the skillet. On one tortilla, spread 1/2 cup cheese, half the beef, then 1/2 cup more cheese. Top with a second tortilla. Repeat for quesadilla two.
  3. Toast. Melt 1/2 Tbsp butter over medium heat. Cook the first quesadilla 2 to 3 minutes per side until the shell is gold and the cheese is melted. Repeat with the second.
  4. Cut. Rest 1 minute. Cut each quesadilla into 4 wedges.
  5. Stack and serve. Pile the wedges on a plate, like the photo. Scatter green onion. Two wedges per serving.

Notes & Tips

  1. Medium heat, not high. High heat burns the tortilla before the cheese melts.
  2. Cheese on both sides of the beef is what holds the stack together.
  3. Drain the beef or the tortillas go soggy.
  4. A pizza cutter cuts clean wedges. A knife smears the cheese.
  5. Keep the first quesadilla in a 200 F oven while you toast the second.

Variations & serving ideas

  • Turkey: Same weight. Add 1 tsp oil so it does not dry out.
  • Cheese mix: Half cheddar, half mozzarella for more color.
  • Spicy: Add diced jalapeno to the beef.
  • No tortilla: Use two large egg-white wraps. Carbs drop more.
  • Chicken: Swap the beef for 1 lb shredded chicken mixed with taco seasoning.
  • Breakfast: Add scrambled egg to the fill and serve with salsa.
  • Green chile: Stir a 4 oz can of diced green chiles into the beef.
  • One giant stack: Cut all 8 wedges and stack them on one plate for the table, like the photo.

Storage

  • Eat now: Best (Cheese is stretchiest for 10 minutes)
  • Refrigerator: Up to 3 days (Reheat in a dry skillet 2 minutes per side)
  • Freezer: Not ideal (Tortillas go limp after thawing)

Frequently asked questions

Is this stack keto-friendly?

Yes, if you use low-carb tortillas. About 6g net carbs per serving (2 wedges). Regular flour tortillas will jump that a lot.

Why is the inside cold?

The heat was too high. Medium heat gives the cheese time to melt while the shell toasts gold.

Which tortillas should I buy?

Any 8-inch low-carb or high-fiber tortilla around 4g net each. Mission Carb Balance or similar works.

Can I use a quesadilla maker?

Yes. Same fill. Cook until the light says done, then cut and stack.

How many wedges per serving?

Two wedges. The whole batch is 8 wedges / 4 servings. Stack them all on one plate if you want the photo look.

Can I make the beef ahead?

Yes. Cook the beef up to 3 days ahead. Assemble and toast when you want to eat.
