Ingredients
Batter (4 mini loaves)
- 1 1/4 cups (125g) fine blanched almond flour
- 1 scoop (30g) vanilla whey or casein protein
- 1 tsp baking powder
- Pinch of salt
- 2 large eggs
- 1/3 cup (80g) plain Greek yogurt
- 3 Tbsp powdered erythritol or monk fruit
- 2 Tbsp melted butter (or coconut oil)
- 1 tsp vanilla extract
- 1 tsp lemon zest (optional, brightens the cranberry)
Fruit and top
- 1/2 cup fresh or frozen cranberries (not dried, not sugared)
- 1 tsp almond flour, to toss the berries
- 2 Tbsp sliced almonds
- A few extra cranberries, for the tops
Swaps
- No whey: Add 2 extra Tbsp almond flour. Protein drops a few grams.
- Casein: Makes a slightly moister crumb than whey.
- Blueberry: Same weight of frozen blueberries. Color is purple, not red.
- One loaf pan: Use a small 6×3 loaf pan. Bake 28 to 32 minutes.
Instructions
| 1 | Heat the oven. Heat oven to 350 F (175 C). Grease 4 mini loaf ramekins (about 5 to 6 oz each) or line them with parchment strips so you can lift the loaves out. |
| 2 | Mix dry, then wet. Whisk almond flour, protein, baking powder, and salt. In another bowl, whisk eggs, yogurt, sweetener, melted butter, vanilla, and zest. Pour wet into dry and stir just until no dry pockets remain. Do not beat. |
| 3 | Fold the berries. Toss cranberries with 1 tsp almond flour. Fold most of them into the batter. Save a few for the tops. |
