High-Protein Almond Chocolate Chip Cookies

These chewy, bakery-style cookies capture the classic oatmeal chocolate chip cookie — with toasted nuts, melty chocolate chips, and golden edges — but in a high-protein, low-carb version. Made with almond flour and protein powder, they’re perfect for guilt-free snacking or post-workout treats.

Why You’ll Love This Recipe

  • High protein from whey + almond flour
  • Low carb and keto-friendly (no oats or sugar)
  • Chewy texture with crisp edges
  • No-bake option for dough + easy to meal prep
  • Tastes indulgent while supporting your goals

Ingredients (Makes 12–16 cookies)

  • 1½ cups (150g) almond flour
  • ⅓ cup (35g) vanilla whey protein powder (or unflavored)
  • ½ tsp baking soda
  • ¼ tsp salt
  • ½ cup (115g) unsalted butter, softened (or coconut oil)
  • ⅓ cup (65g) allulose or monk fruit sweetener (brown sugar style if available)
  • 1 large egg
  • 1 tsp vanilla extract
  • ½ cup (90g) sugar-free chocolate chips
  • ⅓ cup (40g) chopped almonds or pecans (for that oatmeal-nut texture)

Instructions

  1. Preheat oven to 350°F (175°C). Line a baking sheet with parchment paper.
  2. In a medium bowl, whisk together almond flour, protein powder, baking soda, and salt.
  3. In a large bowl, beat softened butter and sweetener until creamy (2–3 minutes). Add egg and vanilla; beat until smooth.
  4. Mix dry ingredients into wet until a dough forms. Fold in chocolate chips and chopped nuts.
  5. Scoop 2-tablespoon portions, roll into balls, and slightly flatten on the baking sheet (they don’t spread much).
  6. Bake 10–12 minutes until edges are golden. Centers will look soft — they firm up as they cool.
  7. Cool on the sheet for 10 minutes, then transfer to a wire rack.
