🥘 Ingredients (Serves 6)

  • 2 cups coconut milk (full-fat)
  • 1 cup heavy cream
  • ¼ cup powdered erythritol or monk fruit sweetener
  • 3 egg yolks
  • 1 tsp vanilla extract
  • 2 tbsp unsalted butter
  • ½ tsp coconut extract (optional)
  • ½ cup unsweetened shredded coconut (for topping)

👩‍🍳 Instructions

Step 1: Heat the Cream Base

In a saucepan combine:

  • Coconut milk
  • Heavy cream
  • Sweetener

Heat over medium-low heat until warm but not boiling.

Step 2: Mix the Egg Yolks

In a bowl whisk the egg yolks until smooth.

Slowly pour a small amount of the warm coconut mixture into the yolks while whisking (this prevents scrambling).

Step 3: Cook the Custard

Return everything to the saucepan.

Cook on low heat, stirring constantly until the mixture thickens slightly.

Step 4: Add Flavor

Remove from heat and stir in:

  • Butter
  • Vanilla extract
  • Coconut extract (optional)

Step 5: Chill

Pour the mixture into a baking dish or serving dish.

Refrigerate for 2–3 hours until firm and creamy.

Step 6: Add Topping

Sprinkle unsweetened shredded coconut over the top before serving.
