This comforting soup tastes rich and indulgent, yet it’s made with smart swaps to keep the WW points low. It’s a perfect one-pot weeknight dinner, and it reheats beautifully for meal prep!

- 1 tsp olive oil
- 1 small onion, diced
- 2 cloves garlic, minced
- 1 cup carrots, sliced
- 1 cup diced tomatoes (canned)
- 4 cups low-sodium chicken broth
- 1 cup skim milk or unsweetened almond milk
- 1 wedge Laughing Cow Light cheese (optional, makes it creamier)
- 1 (9 oz) package refrigerated light cheese tortellini
- 2 cups fresh spinach
- 1 tsp Italian seasoning
- ½ tsp red pepper flakes (optional)
- Salt & pepper to taste

- Sauté Veggies
Heat olive oil in a pot over medium heat. Add onion, carrots, and garlic. Cook until soft (4–5 minutes). - Add Broth & Tomatoes
Stir in diced tomatoes, chicken broth, Italian seasoning, salt, and pepper. Simmer for 10 minutes. - Cook the Tortellini
Add the tortellini directly to the pot and cook according to package directions (usually 3–5 minutes). - Make It Creamy
Lower heat and add milk and the Laughing Cow wedge. Stir until melted and smooth. - Finish with Spinach
Add spinach and stir until wilted. - Serve Warm
