This comforting soup tastes rich and indulgent, yet it’s made with smart swaps to keep the WW points low. It’s a perfect one-pot weeknight dinner, and it reheats beautifully for meal prep!


📝 Ingredients

  • 1 tsp olive oil
  • 1 small onion, diced
  • 2 cloves garlic, minced
  • 1 cup carrots, sliced
  • 1 cup diced tomatoes (canned)
  • 4 cups low-sodium chicken broth
  • 1 cup skim milk or unsweetened almond milk
  • 1 wedge Laughing Cow Light cheese (optional, makes it creamier)
  • 1 (9 oz) package refrigerated light cheese tortellini
  • 2 cups fresh spinach
  • 1 tsp Italian seasoning
  • ½ tsp red pepper flakes (optional)
  • Salt & pepper to taste

👩‍🍳 Instructions

  1. Sauté Veggies
    Heat olive oil in a pot over medium heat. Add onion, carrots, and garlic. Cook until soft (4–5 minutes).
  2. Add Broth & Tomatoes
    Stir in diced tomatoes, chicken broth, Italian seasoning, salt, and pepper. Simmer for 10 minutes.
  3. Cook the Tortellini
    Add the tortellini directly to the pot and cook according to package directions (usually 3–5 minutes).
  4. Make It Creamy
    Lower heat and add milk and the Laughing Cow wedge. Stir until melted and smooth.
  5. Finish with Spinach
    Add spinach and stir until wilted.
