- 1 can (14 oz) diced tomatoes
- 1 can (13.5 oz) coconut milk
- 1 cup vegetable broth

- 2 tsp curry powder
- 1 tsp ground cumin
- ½ tsp turmeric
- ½ tsp paprika
- Salt & black pepper to taste

👩🍳 How to Make Vegan Sweet Potato & Chickpea Curry
1️⃣ Sauté the Aromatics
Heat oil in a large pot over medium heat. Add onion and sauté until soft and translucent (about 4–5 minutes). Stir in garlic and ginger; cook for 30 seconds until fragrant.
2️⃣ Bloom the Spices
Add curry powder, cumin, turmeric, and paprika. Stir for 30 seconds to release their flavors.
3️⃣ Build the Curry
Add sweet potatoes, chickpeas, diced tomatoes, coconut milk, and vegetable broth. Stir well.
